Cookie Croissants
Our simple cookie croissants are an irresistible combination of flaky pastry wrapped around warm, gooey chocolate chip cookie goodness!

- 12 tablespoons butter, melted
- 1 cup brown sugar
- ½ cup sugar
- 1 egg
- 1 egg yolk
- 2 teaspoons vanilla extract
- 2¼ cups flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 2 cups semi-sweet chocolate chips
For Assembly
- 4 croissants
- ½ cup powdered sugar
Preheat the oven to 350°F. Line a baking sheet with parchment or silicone.
In a large bowl or the bowl of a stand mixer, mix the butter, brown sugar, and sugar. Add the egg, egg yolk, and vanilla extract, and mix until combined. Add the flour, baking soda, and salt, and mix to form a soft dough. Gently fold in the chocolate chips.
Slice each croissant in half horizontally and spread 3-4 tablespoons of cookie dough in an even layer on one half of the croissant. Place the other half of the croissant on top. Press a teaspoon-sized ball of cookie dough on top of each side of the croissant.
Bake in the preheated oven for 12-13 minutes, until the cookie dough on top is light golden brown.
Remove from oven and let cool for 5 minutes. Sprinkle with powdered sugar. Cut in half and serve warm.
Recipe tips.
- We fill the croissants with homemade chocolate chip cookie dough, but store-bought cookie dough can also be used.
- Some easy variations include using different types of chocolate chips or adding in chopped nuts.
- We like to serve this decadent dessert with a glass of milk or a scoop of vanilla ice cream.
Prep ahead of time. Add the cookie dough to the croissants up to 48 hours beforehand, cover, and store them in the fridge until you're ready to bake. They are also freezeable for 1-2 months. Bake from frozen, adding about 5 extra minutes to the baking time.
Store in an airtight container at room temperature for about 3 days. If you desire, warm them up a bit in the microwave.
