Ingredients
2carrots,peeled and sliced
4potatoes,peeled and diced
2cupswater
1poundground beef
1 (14-ounce)canbeef broth
1 (12-ounce)candiced tomatoes,drained
2tablespoonssugar
1 (11-ounce)cancorn,drained
1tablespoontaco seasoning
1cupgrated mozzarella or parmesan cheese
salt and pepper to taste
Instructions
Add carrots, potatoes, and water to your crock pot. Cook on low for 3-4 hours (or HIGH for 1½-2 hours).
Brown the ground beef in a skillet and add to the crock pot along with the diced tomatoes, beef broth, sugar, corn, and taco seasoning. Cook on low for another hour or HIGH for 30 more minutes. Add salt and pepper to taste and 1 cup of grated cheese a few minutes before serving. ENJOY!
Notes
Store leftovers in airtight containers in the fridge for 3-4 days, or freeze for 4-6 months. Reheat in the microwave or on the stovetop.
