Course: Side Dish
Cuisine: American
Servings: 6
- 2 pounds fresh green beans
- 6 strips bacon, thin cut
- 4 tablespoons unsalted butter, melted
- 3 tablespoons light brown sugar
- garlic salt, to taste
Put green beans in a microwave-safe bowl and cover with water. Cook on high for 3 minutes, or until green beans are tender.
Preheat the oven to 350 degrees F. lightly grease a baking sheet and set aside.
Gather 6-10 green beans into a bundle and wrap with 1 piece of bacon. Secure bacon with a toothpick. Repeat to make 6 bundles.
Place bundles on the prepared baking sheet (or a wire rack over an aluminium foil-lined baking sheet). Sprinkle with melted butter, brown sugar and garlic salt.
Bake for 18–20 minutes. For extra crispiness, broil for 1 minute, then flip bundles and broil for 1 minute on the other side.
Recipe Notes:
- Use regular-cut bacon, not thick, so it crisps up nicely around the beans.
- Blanch beans just until tender-crisp—this keeps their bright color and fresh taste.
- Secure bundles with toothpicks to keep everything together while baking.
- Make ahead: prep and wrap the bundles, refrigerate overnight, and bake when ready.
- For extra flavor, add a pinch of cayenne or black pepper to the brown sugar glaze.
Make ahead of time. To save a bit of time the day of your dinner, you can prep these bundles through Step 4 the night before, cover and store in the refrigerator.
Store leftovers in an airtight container in the fridge for 2-3 days. Reheat: Preheat a pan over medium heat, place bundles in the pan, cover, and allow them to warm up; about 2-3 minutes.
