- zest and juice of one lime
- 1 tablespoon honey
- 4-6 cups chopped fresh fruit of your choice
In a medium bowl, whisk the lime zest, lime juice, and honey. Add the fruit to the bowl and toss to combine.
Refrigerate at least twenty minutes before serving to allow the flavors to blend.
Recipe tips.
- Try to chop the fruit into similar-sized pieces for an even flavor distribution.
- We used strawberries, blackberries, blueberries, and raspberries, but other fruits like kiwi, green or red grapes, peaches, mandarin oranges, cantaloupe, and fresh pineapple can be used
- It will alter the flavor a bit, but you can use pure maple syrup instead of honey.
Prep ahead of time. Wash and cut most fruit up to 24 hours in advance. Store each type of fruit in separate airtight containers in the refrigerator. The dressing can be made and stored in an airtight container in the fridge for up to 2 days.
Store leftover salad in an airtight container in the refrigerator for about 2 days. If needed, drain excess liquid.
