- 1 pound baby carrots
- 3 tablespoons unsalted butter
- 2 tablespoons honey
- 1 tablespoon lemon juice
- 2 teaspoon garlic salt (with parsley flakes)
- fresh ground black pepper
- parsley dried
Add several cups of water to a pot. Sprinkle with garlic salt and bring to a boil on MEDIUM-HIGH heat. Add carrots and cook for 5 to 8 minutes (shorter for baby carrots and longer for gourmet carrots) or until fork tender.
Drain the water from the pot. Add butter, honey, lemon juice, pepper, and garlic salt. Cook on LOW for 5-7 minutes or until carrots are coated with glaze.
Add any more salt and pepper to taste and garnish with dried parsley.
STORE. Leftover honey glazed carrots can be stored in an airtight container in the fridge for 3-4 days.
FREEZE for up to 2 months. They will be much softer after being frozen, but still delicious.
Reheat in a pan on the stovetop with a bit of extra butter or olive oil. Or use the microwave to warm them up.
