Add several cups of water to a pot. Sprinkle with garlic salt and bring to a boil on MEDIUM-HIGH heat. Add carrots and cook 5 to 8 minutes (shorter for baby carrots and longer for gourmet carrots), or until fork tender.
Drain the water from the pot. Add butter, honey, lemon juice, pepper and garlic salt. Cook on LOW for 5-7 minutes or until carrots are coated with glaze.
Add any more salt and pepper to taste and garnish with dried parsley.
