Honey Glazed Carrots

Sweet honey glazed carrots are simple and ready in minutes. They are the perfect side dish for any meal, especially holidays!

We love quick and simple side dishes and these honey glazed carrots are just that! They are a great side to any dinner – especially Pot Roast, Steak, Roast Chicken, or Parmesan Pork Chops.

Can you guys believe that Easter is just around the corner?

We love all the holidays around here and have been busy getting a menu put together – from the main dish to the sides.

One side we love to make is honey glazed carrots, along with some of our other classic sides like rolls and mashed potatoes.

If you haven’t made these before, they are one of the easiest and most delicious side dishes you can make. Similar to our Brown Sugar Glazed Carrots, they are flavorful, soft, and perfect for any dinner (especially holiday dinner).

How to Make Honey Glazed Carrots

CARROTS. Add several cups of water to a pot. Sprinkle with garlic salt and bring to a boil on MEDIUM-HIGH heat.

Add carrots and cook for 5 to 8 minutes (shorter for baby carrots and longer for gourmet carrots), or until fork tender.

GLAZE. Drain the water from the pot. Add butter, honey, lemon juice, pepper, and garlic salt. Cook on LOW for 5-7 minutes or until carrots are coated with glaze.

Add any more salt and pepper to taste and garnish with dried parsley.

Alternative Cooking Methods

Follow these directions to be able to cook this honey glazed carrots recipe in more ways.

SLOW COOKER. Place the carrots in a greased crock pot.

  • Combine melted butter, honey, lemon juice, garlic salt, pepper, and water.
  • Drizzle the mixture over the carrots and mix until the carrots are coated.
  • Cook on HIGH for 2-3 hours or until carrots are tender.

OVEN. Place carrots in a buttered casserole dish and sprinkle with salt and pepper.

  • Sprinkle with honey and lemon juice and drizzle on 2 tablespoons of melted butter.
  • Cover and bake at 350°F for 30-40 minutes or until soft.

Recipe Tips

Carrots. I used petite rainbow carrots to make and photograph this recipe, but any type of carrot can be used. Just be sure that they are all the same size so that they cook at the same rate.

If the carrots have not been pre-peeled, then wash, dry, and peel the carrots. Trim stem if needed.

Honey does not expire, but it can crystalize. Simply measure out the crystalized honey and add it to the pan. It will melt and taste great on the carrots. If the honey is too hard to scoop, simply warm it in the microwave. 

Lemon juice can be fresh or from a bottle. One regular-size lemon will yield 2-3 tablespoons of lemon juice.

Variations.

  • Honey can be substituted with maple syrup.
  • Add lemon or orange zest.
  • Flavor with some fresh thyme or rosemary.
  • Sprinkle on some cinnamon, nutmeg, ginger, or cayenne pepper.

Storing Tips

Make ahead of time. Prepare the carrots the day before by washing, peeling, and trimming them.

  • Place them in a container and cover them with water to keep from drying out.
  • Store them in the fridge.
  • Drain and pat dry before using.

Honey carrots are best when served right after cooking but can be cooked the day before and stored covered in the fridge. Reheat on the stovetop before serving. 

STORE. Leftover honeyed carrots can be stored in an airtight container in the fridge for 3-4 days.

FREEZE. They can also be frozen for up to 2 months. Keep in mind they will be much softer after being frozen, but still delicious.

Reheat. The best way to reheat the glazed carrots is in a pan on the stovetop with a bit of extra butter or olive oil. You can also use the microwave to warm them up.

Recipe FAQ

Can I use baby carrots instead of the petite rainbow carrots?

Yes! You can use any type of carrot, or even cut up the carrots into smaller bites. Just be sure that they are all the same size so that they cook at the same rate.

Can I peel carrots ahead of time?

You can peel carrots and keep them in a bowl of water in the refrigerator for several days. Drain and pat dry before using.
