  • Quick. They’re on the table in only 15 minutes!
  • Easy. They only require a few ingredients.

Similar to our Brown Sugar Glazed Carrots, they are flavorful, soft, and perfect for any dinner (especially holiday dinner).

Cooking carrots in a pot of water on the stove.

Ingredients

  • baby carrots – Any type of carrot can be used. If needed trim stems and peel. Cut them all the same size so that they cook at the same rate.
  • unsalted butter – Salted butter can be used as well.
  • honey – Or use maple syrup for a different flavor (If the honey is too hard to scoop, warm it in the microwave).
  • lemon juice Fresh or from a bottle (one regular-size lemon will yield 2-3 tablespoons of lemon juice).
  • garlic salt with parsley flakes
  • black pepper
  • parsley dried

  3. GLAZE. Drain the water from the pot. Add butter, honey, lemon juice, pepper, and garlic salt. Cook on LOW for 5-7 minutes or until carrots are coated with glaze.
  4. Add any more salt and pepper to taste and garnish with dried parsley.

  2. Drizzle the mixture over the carrots and mix until the carrots are coated.
  3. Cook on HIGH for 2-3 hours or until carrots are tender.

Storing Tips

  • Make ahead of time. These are best fresh but can be prepped the day before. Wash and boil the carrots according to the recipe. Drain and allow them to cool before placing them in an airtight storage container and in the refrigerator. Let them sit at room temperature for about 30 minutes before tossing them in the honey and other seasonings.
  • STORE. Leftover honey glazed carrots can be stored in an airtight container in the fridge for 3-4 days.
  • FREEZE for up to 2 months. They will be much softer after being frozen, but still delicious.
  • Reheat in a pan on the stovetop with a bit of extra butter or olive oil. Or use the microwave to warm them up.
