Blueberry Delight Recipe

This Blueberry delight recipe is a chilled layered dessert of shortbread, cream cheese, and sweet blueberry topping, all prepped in only 15 minutes!

Ingredients

  • 10 ounces shortbread cookies
  • ¼ cup butter, melted
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 (8-ounce) tub whipped cream, about 3 cups
  • 12 ounces blueberry pie filling
  • 1 cup chopped pecans

Instructions

  • Preheat the oven to 350°F.
  • Crush shortbread cookies in a bag. Take out about ½ cup of the mixture and set aside. Mix the remaining crushed cookie mix with the melted butter.
  • Place buttered crumbs into the bottom of an 8.5 x 11.5-inch pan. Bake for 5 minutes and let cool.
  • In a bowl, beat the cream cheese, powdered sugar, and container of Cool Whip until mixed well. Spread over the bottom crust later.
  • Slowly pour blueberry pie filling over the cream cheese layer making sure it is spread all over.
  • Sprinkle crushed pecans over the pie filling.
  • Refrigerate for at least 1 hour until ready to serve.
  • Right before serving add some Cool Whip and reserved cookie crumbs. ENJOY!

Notes

Make ahead of time. Cover with plastic and refrigerate for up to 24 hours. To freeze, wrap it tightly with plastic wrap and again with foil. Label and freeze for up to 1 month. Thaw in the fridge.
Store. Cover the dish or divide it into individual airtight storage containers and keep it in the refrigerator for 2-3 days or freeze for 3-4 weeks.
