Easy Yeast Rolls Recipe

With just 4 ingredients, these easy yeast rolls are ready in under an hour and are perfect for a light snack or served with dinner.

Ingredients

  • 1 (¼ oz) packet Quick Rise Yeast
  • 1 tablespoon sugar
  • ¾ cup warm water (110°-115°F)
  • 4 cups biscuit/baking mix

Instructions

  • Dissolve yeast and sugar in warm water. Stir in biscuit mix and turn out onto a lightly floured surface. Knead until smooth and elastic, about 5 minutes.
  • Divide and shape dough into 24 small balls. Place on greased baking sheet. Cover and let rise in a warm place until doubled, about 30 minutes.
  • Bake at 400° until golden brown, 10-14 minutes.

Notes

Recipe Tips.
  • Fluffy Rolls. Be sure you do not overmix the dough and allow at least 30 minutes for the dough to rise.
  • Homemade biscuit mix (4 cups). Whisk 3½ cups all purpose flour, 2 tablespoons baking powder, 1½ teaspoons salt, and 2 tablespoons sugar. Cut in 8 tablespoons cold butter or ½ cup shortening to fine crumbs.
  • Active dry yeast. Use 1 packet active dry yeast and make the recipe as instructed, but allow more time (about 60 minutes) for the dough balls to rise before baking.
  • Jam and butter. Slather Strawberry Jam, Honey Butter, or Cinnamon Butter onto the warm rolls.
Refrigerate dough balls, covered, up to 24 hours. To bake, rise at room temp 45–90 min until puffy, and bake.
Freeze dough balls (before letting them rise) on a baking sheet. Once solid, place in a freezer bag and store for up to 3 months. Place dough balls in a baking pan and thaw and rise at room temperature for 3-4 hours, and bake. 
Store baked rolls. Cool completely and keep at room temperature for 3 to 5 days or freeze rolls for up to 3 months.
