Ingredients

  • 3 peaches fresh, yellow, ripe - diced into 1/2 inch cubes
  • ¼ red onion chopped
  • ½ red bell pepper chopped
  • 2 roma tomatoes chopped
  • 1 jalapeno diced, remove the seeds for less spice

Notes

Recipe Tips.
  • Use ripe but firm peaches so they hold their shape.
  • You do not need to peel the peaches. I like to rub the fuzz off before washing and slicing, but that is optional.
  • Dice everything evenly for the best texture and the best bite.
  • Let the salsa chill for at least 20 minutes before serving. This will let the flavor meld.
  • Adjust jalapeño and chili powder to adjust the spice level as desired. For a mild salsa, remove the membrane and seeds, but leave them in for a hot salsa.
  • Serve the same day for maximum freshness.
Store fresh peach salsa in a mason jar, Tupperware, or any airtight container. Keep it in the fridge. It will last for up to 4 days.
Serving suggestions. Peach jalapeno salsa will go wonderfully with any Mexican dish, but our favorites include: Chicken Tacos, Green Chili Smothered Burrito, Chicken Quesadillas, Loaded Nachos. It can also be served on top of chicken, fish, pork, or steak!
