Strawberries and Cream Angel Food Cake + Breakfast Biscuits

Mother’s Day is right around the corner! Are you ready?

I always stress out a little bit because I never know what to get my mom. Fortunately, we have similar style and taste and I usually end up buying her something I’d want for my own home knowing she will love it too. 😉

Like many of you, we not only shower our moms with love and thoughtful gifts, but we also make sure mom gets amazing food that day. With that in mind, I wanted to share with you two delicious recipes inspired by a recent trip to HEB (my go-to grocery store here in Texas), to help you celebrate your own MOMentous and amazing mothers on Mother’s Day. I know many of you do breakfast in bed, so the first recipe is one that I think your mom will LOVE on the special day. They’re Breakfast Biscuit Cups and they are simple to make and so tasty!

Breakfast Biscuit Cups - filled with sausage, eggs, potatoes, cheese and more! So simple you'll want to make these for breakfast all the time!

Here is what you’ll need to make them:

BREAKFAST BISCUIT CUPS:

INGREDIENTS:

  • ½ bag of Jimmy Dean Sausage Crumbles
  • 1 tablespoon vegetable oil
  • 1 tablespoon all-purpose flour
  • Salt and pepper, to taste
  • ½ cup milk 
  • ½ cup frozen cubed hash brown potatoes, thawed
  • 1 tablespoon butter
  • 2 large eggs
  • ¼ teaspoon garlic salt
  • 1 TB water
  • 1 can (16.3 ounces) large refrigerated flaky biscuits
  • 2 tablespoons butter, melted
  • ½ cup shredded Colby-Monterey Jack cheese
  • Muffin Tin

DIRECTIONS:

  1. Preheat oven to 375 degrees.
  2. Add sausage to a skillet with oil. Cook until warmed up and add flour, pepper and salt. Add 1/2 cup milk and bring to a boil. Stir until thickened and set aside.
  3. In another skillet cook potatoes and butter until tender.
  4. In a medium bowl, whisk together eggs, garlic salt and milk. Add to potatoes and cook until eggs are almost done.
  5. Press biscuits into greased muffin tin. If too thick, peel off a layer of the biscuit and fit in. Push onto bottom and up sides. Spread melted butter onto biscuits.
  6. Spoon egg mixture, sausage and cheese into cups.
  7. Bake for 15-18 minutes or until golden. Let cool for a few minutes and enjoy warm.

MAKES 8

NOTE: These are great frozen too. Just freeze once cooled and heat in microwave for 1 minute.

These were so simple to make and can be easily changed up. I think next time we’ll try bacon instead of sausage!!

In case you do breakfast with your own families, I also have another recipe to share that is perfect in case you are meeting up with your moms later in the day. It’s tradition in our family for my dad and all the kids to make Sunday dinner on Mother’s Day. We all divvy up the assignments and I’m usually assigned dessert. I wanted to think of something I knew my mom would love so I came up with this Strawberries and Cream Angel Food Cake. You guys – it is AMAZING!!! It was simple to make and looked gorgeous!

Here is what you’ll need to make it:

INGREDIENTS:

DIRECTIONS:

  1. Make Angel Food Cake as directed on box. Let cool and cut in half. Set aside.
  2. In a medium bowl, mix cream cheese and butter until smooth. Mix in powdered sugar and fold in whipped topping. Set aside.
  3. In a separate bowl mix pudding, milk and vanilla. Fold this mixture in with the cream cheese mixture.
  4. Spread half the mixture onto the first layer of Angel food cake. Add the top of the cake and add the rest of the mixture.
  5. Refrigerate for at least one hour.
  6. Right before serving, place chopped strawberries and whole strawberries on top. ENJOY!

Ingredients

  • 1 box Angel Food Cake Mix and ingredients listed on back

  • 4 oz cream cheese softened
  • 1/4 cup butter softened
  • 1/2 cup powdered sugar
  • 1 small container cool whip
  • 1 box white chocolate pudding or vanilla
  • 1 1/2 cup milk
  • 1/2 tsp vanilla extract
  • 1 pint strawberries half chopped up and the other half left whole

Instructions

  8. Do you make the pudding beforehand or just add the pudding mix and mix it with the milk and vanilla?

    1. You do not make it ahead. You’ll mix the powder with the milk & vanilla 🙂 Hope that helps!

  9. Really disappointed with this recipe… I tried making this for my bf’s 30th birthday and I don’t really understand the need for 1.5 cups of milk. The cream mixture was like pancake batter. It just completely soaked through the cake.

  10. I know this is an old post. I made this and it was so good on the angel food cake. I was curious, do you think this filling would taste good between the layers of a white cake and then covered with a light buttercream frosting? Wasn’t sure if I added some strawberries into the filling between 2 cakes if that would work well? Thanks so much!

    Not only is this Strawberry and Cream Angel cake pretty, it is also delicious. This is my go to cake for special dinners for friends. Sometimes I use an angel food cake, sometimes just a cake mix. Both are so good. Thanks for the recipe.
