A Spooky Snack!

Who here loves deviled eggs? In my experience, you either love them or hate them. Well, I happen to love them! I decided to take them up a notch to make them party perfect and a little bit spooky.

We took our classic Deviled Eggs recipe and made it Halloween-ready! By adding some food coloring and olives we create some “eye of newt” eggs that are quite eye-catching.

Add in some of our favorite monster munchies or fill a Halloween Charcuterie Board with your favorite snacks for celebrating all month long! No trick here! Just a savory spooky treat.

Quick + Easy!

Halloween deviled eggs eyeballs are a fun twist on a classic appetizer. They are easy and fun!

EGGS. Fill a medium pot with enough water to cover eggs and bring to a boil over medium-high heat. Once the water is boiling, gently lower eggs into the water using a strainer ladle. Turn the heat down to a simmer, and simmer eggs for 15 minutes.

Once done, transfer the eggs to a bowl of ice water for 5 minutes.

Remove eggs from the water and tap on the counter to crack. Remove shells and rinse eggs.

Carefully cut each egg lengthwise, remove the yolk, and transfer the yolks to a small bowl. Set egg whites aside.

FILLING. Add mayonnaise and mustard to yolks and whip with a fork. Add salt and pepper to taste. Divide into two bowls. Add green food coloring to one and purple food coloring to another.

EYES. When ready to serve, spoon mixture into the hole of each egg white and sprinkle with paprika. Top with slices of green olives to look like eye balls.

Recipe Tips

For perfectly cooked eggs follow my musts. These Halloween themed deviled eggs are great for parties!

Substitutions. If you don’t like mayo you can use Miracle Whip. Yellow mustard can be replaced with Dijon mustard, or whatever type is your favorite. Use slices of black olives in place of green olives.

Egg filling. You can mash and stir the egg yolk mixture with a fork or use a handheld mixer to whip them so they are a little smoother.

Perfectly peeled. For other methods to make hard-boiled eggs use this Easy Peel Hard Boiled Eggs post or this Instant Pot Hard Boiled Eggs post.

Decorating. To get the vibrant coloring use neon food dye. Use a toothpick to apply red food coloring to the egg whites to resemble blood vessels.

Make Eggs Ahead of Time

You can fully prepare the Halloween deviled eggs recipe 1 day ahead of time. You can also prepare different aspects of the dish over several days

  • 4-5 days ahead: Boil the eggs.
  • 2 days ahead: Peel the eggs and separate the egg whites and the egg yolks. Place the egg halves in an airtight container and into the fridge. Use the yolks and mix them with the mayo, mustard, and seasoning. Place the yolk mixture in a container in the fridge.
  • 1 day ahead: Stir in the food coloring and fill the egg whites. Add the olive pupil.

Recipe FAQ

How far in advance can I make Halloween eye of newt deviled eggs?

Hard-boiled eggs can be made up to 5 days ahead of time, but don’t fully prepare the colorful eye of newt deviled eggs until 1 day ahead of time. Keep the filled eggs covered and in the fridge until you wish to serve them.

How many deviled eggs per person?

Some people love deviled eggs while others won’t touch them. With that in mind, I generally plan on 2-3 deviled eggs per person that way those who love them can easily enjoy a few extra.

What is the easiest way to add the filling to deviled eggs?

I wanted to make these eye of newt deviled eggs look a bit messy so I used a spoon to plop the mixture in the middle. If you want a cleaner look, use a piping bag or even a small cookie scoop.

These are such a fun twist on deviled eggs! Every few months we have a family “silly dinner,” and these were the perfect appetizer for our most recent one. My kids have already asked if we can make them again for Halloween!
