I Love a Good Salad!

There’s nothing I love more in the spring and summer than a big bowl of salad! I often order them at restaurants and enjoy them for lunch or dinner at least a couple of times a week.

A new favorite salad is this bright apple salad, which makes a great side dish, or can be filling enough to enjoy on its own with a slice of French Bread!

Why we love it:

  • Always in season. Enjoy this bright citrus-dressed salad in the summer or in the fall during apple season! It’s really in season all year long.
  • Flavors and textures. This apple salad is the best of both worlds, sweet, savory, and filled with texture!
  • The dressing. This apple salad has a brilliant Citrus Vinaigrette that enhances the flavor of all of the ingredients!

Ingredients

  • tangerines
  • olive oil
  • lemon juice about 1 to 1.5 tablespoons
  • clove garlic
  • lemon zest
  • salt
  • baby greens (spring mix) – is a mixture of young leaves and often includes arugula, chard, endive, radicchio, baby spinach, and other heirloom lettuces.
  • walnuts- or other nuts like pecans or pistachios
  • feta cheese or goat cheese
  • apples Envy, Honeycrisp, Fuji, Granny Smith apples, or any kind you prefer.
  • avocado

A Simple Salad

  1. DRESSING. Combine tangerine juice, oil, lemon juice, garlic, lemon zest, and salt in a container. Seal and shake until combined.
  2. SALAD. Toss the baby greens, walnuts, feta, lemon zest, and apple together in a large bowl.
  3. SERVE. Add dressing and toss to coat. Top with avocado and any more dressing or feta, if desired.

Recipe Tips

  • Lemon. Zest the lemon before juicing it.
  • Treat apple slices with lemon juice or Ball’s Fresh Fruit powder to keep apple slices from browning.
  • Additions. Try adding Candied Walnuts, dried cranberries, celery, raisins, or green onions.
  • Add protein using grilled chicken, turkey, or crumbled bacon.

Storing Info

  • Make ahead of time. Prepare the dressing 1-2 days before. The apple salad recipe can be assembled a few hours before serving, but be sure to treat the apples and avocados with Balls Fresh Fruit. Don’t add the dressing until right before serving.
  • STORE. Depending on how much dressing the salad has on it leftovers can be stored in an airtight container in the refrigerator for 1-3 days.

Ingredients 

Dressing

  • 3 tangerines, juiced
  • 2 tablespoons olive oil
  • ยฝ lemon, juiced
  • 1 clove garlic, minced
  • ยฝ teaspoon lemon zest
  • salt to taste

Salad

  • 1 (10-ounce) package baby greens
  • ยฝ cup chopped walnuts
  • โ…“ cup crumbled feta cheese
  • 2 teaspoons lemon zest
  • 1 apple, cored and thinly sliced
  • 1 avocado, peeled, pitted and diced

Instructions 

  • Make dressing by combining tangerine juice, oil, lemon juice, garlic, lemon zest, and salt in a container. Seal and shake until combined.
  • Make salad by tossing together the baby greens, walnuts, feta, lemon zest, and apple together in a large bowl.
  • Add dressing and toss to coat.
  • Top with avocado and any more dressing or feta, if desired.
