andes mint parfait

I’ve loved mint and chocolate ever since I can remember. As a teenager I learned that “grasshopper” meant mint and chocolate, and I was hooked. Since then, I’ve shared loads of mint and chocolate treats here on the site, like Mint M&M Oreo Cookies and Grasshopper Trifle (both delicious!!)

Today I am sharing another mint and chocolate treat, for Grasshopper Parfaits. This particular recipe includes chopped Andes, Oreos, chocolate pudding, and mint whipped cream. All of these ingredients together make this a delicious dessert everyone loves!

Since this is served in layers in a clear cup, it looks fancier than typical desserts (but doesn’t require the work of fancy recipes). Long story short, it looks like a million bucks and is perfect to serve at any occasion!!

Next time I might try smaller plastic cups, there is quite a bit in that cup!

variations + Storing Info

Additions/Variations

  • Use pistachio pudding instead of green cool whip
  • Top with chocolate cake crumbles
  • Add crushed cocoa puffs
  • Add chocolate rice krispies
  • Use mint Oreos
  • Use York Peppermint Patties
  • Replace with thin mints
  • Top with festive green sprinkles

If you are worried about the Oreos getting soft if you STORE the grasshopper parfaits premade I would lean towards preparing them right before serving. If you want to get ahead and get everything prepped before your event keep everything covered and in separate containers in the fridge.

I would avoid trying to FREEZE these parfaits because you risk them getting freezer-burn and the texture is likely to change after freezing and thawing.

I just finished up making this for dessert today. We will have it after we have our corned beef, cabbage, potatoes, carrots. ☘️
It was super easy to put together! I didn’t add the mint extract to the cool whip though. I think the Andes mints will be enough. ☘️

Sounds like the perfect ending to a wonderful meal. Hope you enjoyed the parfait!

Will this sit good over night?

    1. Lil'Luna Team says:

The only challenge you may run into is the Oreo layers getting soft sitting over night. If you are worried about that, I would lean towards preparing them right before serving. If you want to get ahead and get everything prepped before your event keep everything covered and in separate containers in the fridge, and then assemble before serving.

Recipe does not give complete instructions regarding the Andes Mints. The are too expensive to guess the amount…
Then there are no measures of how much pudding, whipped cream, etc. to use for each serving to make 8 servings.

    1. Lil'Luna Team says:

The full recipe is listed at the bottom of the post, including the amount of Andes Mints, pudding, whipped cream, etc. Both the ingredient list and recipe instructions are there. 🙂

i guess my question is were can i find mint FLAVOR as you write? is it an extract or a leaf? sorry for these questions but my skills in cooking are less then poor. there very few items i can make from your website and none of them come out like the photos. (and i am sure this one not going to either) but it is cool i love to cook and try things. so i like to try this. but have no idea were to even look for mint flavor. ty and thanks for all the RECIPES.

    1. Kristyn Merkley says:

It is an extract 🙂 At least, you are trying! You should be able to find it in the baking aisle. Good luck!! You can do it!

  6. Chocolate & Mint says:

please tell me where you got the mint flavoring!!!!!!!
going to make this ‘cuz my sister LOVES mint and chocolate mixed together <3

    1. Kristyn Merkley says:

They will love these, then!! I found mint flavoring at my grocery store. You should be able to, also 🙂

  7. Bonnie says:

How many Andes mints do you use in the recipe?

    1. Kristyn Merkley says:

I just used a package & reserved a few to put one on each top 🙂 I can’t remember how many ounces the package is, but I’ve only seen the one size. Hope that helps!

    2. Bonnie says:

Than you. Yes this did help. The recipe sounds delicious.

  8. Shawnna says:

    1. Lil' Luna says:

Yay!! Thanks so much 🙂 It is absolutely yummy!!

      1. Gayanne says:

How much mint flavoring do we use? Peppermint? Spearmint?

      2. Lil' Luna says:

I would only use one or two drops. It can be pretty strong, so start with one & go from there. It depends on how much you like. My flavor is just plain mint.
