With buttery crescent dough, melty brie, and sweet cranberry sauce all in one bite, these Cranberry Brie Bites won’t last long around hungry family and friends!

I know these bites look totally fancy, but they’re SO easy to make. Which means you’ll have time to make more appetizer recipes to pair them with. 😉 Some of our favorites are crock pot meatballs or bacon wrapped smokies.

How gorgeous are these little bites of heaven? Brie + cranberry + puff pastry = match made in heaven. Right?? These bite sized appetizers were made for holiday entertaining. They are so easy to make and turn out incredibly tasty. We just love ’em.

I am always trying to think of new appetizer ideas for this time of year. So. Many. Holiday. Parties. Am I right? We love our go-to appetizers like our crockpot meatballs or these spinach puffs that everyone loves. But sometimes you just need something new.

That’s where this perfect combination of flavors comes into play. I love the cranberry sauce mixed with the melted brie cheese. And who doesn’t love puff pastry? YUM!

How to Make cranberry brie bites

DOUGH. Get that oven preheated to 375°. Roll out the crescent dough on a lightly floured surface. Pinch together the seams and cut into 24 squares. Place the squares into greased mini muffin tin slots. I love anything made in a mini muffin tin.

FILLING. Chop brie into small pieces and place them inside the crescent dough. Top each one with a spoonful of cranberry sauce, chopped pecans, and one small sprig of rosemary.

BAKE. Bake at 375 degrees for 15 minutes, or until the puff pastry turns golden brown.

Variations: You can use crescent dough or puff pastry for this recipe. Either tastes really great! You can also leave out the nuts if you don’t want those on there. These brie and cranberry bites are delicious however you make them!!

brie and cranberry bites tips + Notes

Every autumn is cranberry season. They are at peak from mid-September to mid-November. Take advantage of this and make your cranberry sauce with fresh cranberries. This recipe is even more wonderful with homemade cranberry sauce.

This is a great make-ahead appetizer recipe. Make everything ahead of time up to 24 hours in advance. Don’t add the cranberry sauce until right before baking. Keep them covered in the mini muffin tins airtight in the fridge.

Use this same storing method for any leftovers! Heat them up in a warm oven for a few minutes and eat any leftover.

Cranberry Brie Bites Recipe

Sweet and tart cranberry brie bites are perfect for holiday entertaining. They are simple to make and prep in minutes.

Ingredients 

  • 1 (8-ounce) tube crescent dough
  • flour for surface
  • 1 (8-ounce) wheel brie
  • ½ cup whole berry cranberry sauce
  • ¼ cup chopped pecans
  • 6 sprigs rosemary cut into 1" pieces

Instructions 

  • Preheat oven to 375°F.
  • Roll out crescent dough on a lightly floured surface. Pinch together seams and cut into 24 squares. Place squares into greased mini muffin tin slots.
  • Chop brie into small pieces and place inside the crescent dough. Top with a spoonful of cranberry sauce, chopped pecans, and one small sprig of rosemary.
  • Bake for 15 minutes, or until golden.

  1. These look so festive and will definitely be going on our holiday list, but I do have a dumb question, are you to eat the whole sprig of Rosemary in each cup or is it just for decoration, as rosemary can be pungent.

    1. Not a dumb question at all!! I typically include the small sprig of rosemary when cooking, for the flavor. Then you can certainly remove before eating though. Hope you enjoyed the bites!
