Make school fun!!!

In the past year we’ve shared several Flatout recipes that the kids have loved including, Flatbread pumpkin quesadillas and Flatbread Wrap Bites.

Today’s recipe for Flatbread Monster Sandwiches was another hit with the whole family! Not only did they love eating them, but they’re fun to make as well making school lunches even more enjoyable. These little monsters can be made a variety of ways, but can be easily customized based on the sandwich ingredients your kids enjoy most.

The Flatout Foldits were the perfect base for our sandwiches and made for the perfect monster mouths. Not only are they healthy but they taste good and are great for the kids lunches (and even my own lunch at home!)

We filled the sandwiches with our favorite meats, cheeses and veggies and used different olives for the eyes. Although I admit the kids don’t like the Spanish olives, they definitely love them as the eyeballs for their monster sandwiches!

FOR THE ITALIAN MONSTER: Add the mayonnaise on one side of the flatbread, then mustard on the other. On the mayonnaise side, layer with ham, rolled salami and cheese cut to look like teeth. Use two toothpicks to hold everything in place. Top toothpicks with olives for eyes.

FOR THE CHICKEN AND CEASAR MONSTER: Add the mayonnaise on one side of the flatbread, then mustard on the other. On the mayonnaise side, layer with chicken, lettuce and cheese cut to look like teeth. Use two toothpicks to hold everything in place. Top toothpicks with olives for eyes.

Recipe Tips

Favorite Sandwich Ingredients: These really are fun to be creative with. Here is a greater list of items you might use, and definitely add your own favorite things.

  • Meat- ham, sliced pepperoni, turkey, roast beef, salami, bacon, pastrami, chicken
  • Condiment- relish, mustard, mayo, sweet chili jam, cream cheese, cranberry sauce, pesto, hummus, ranch
  • Toppings- lettuce, tomatoes, jalapenos, cheese, bell peppers, pickles, onion, spinach

How to pack these for lunch

  • If you want to send these with your kids for school lunch, then it is best to store these in a tupperware container rather than a plastic baggie for on the go eating.
  • Secure the olives with toothpicks so they stay in place. Just make sure that your kiddo knows to remove them before eating.

STORE the meat, cheese, and toppings in the fridge until you’re ready to combine the ingredients. This really isn’t a make ahead sort of meal unless you are packing them for lunch. In that case keep the tupperware container in a lunch box with an ice pack.
