Cheesy Hasselback sweet Potatoes are stuffed with cheese, bacon and so much flavor. It’s one of the yummiest ways to serve potatoes.

a Cheesy + Delicious twist

I’m always looking for ways to spice or change up recipes to make things a little more interesting, or just to shake it up! We love cheesy hasselback potatoes, but I thought it would be fun to give this a try with a sweet potato.

I love sweet potatoes, they have such great flavor! I knew that I needed to add a little something somethings to take these over the top. The cheese and bacon really did the trick. I mean really, what doesn’t taste better when you add bacon?!

These make one fancy looking side to pair at a holiday dinner or special occasion, or just whip them up at a BBQ and serve with a pile of ribs!

Just Cut, Stuff + Bake!

PREP. Preheat oven to 450.

CUT. Cut a thin, lengthwise slice off the bottom of the potatoes so they will not roll. Slice potato crosswise without going all the way to the bottom. Do this for all the potatoes.

BAKE. Place potatoes on a foil-lined baking sheet. Brush with half of the melted butter and bake for 35-45 minutes or until tender.

STUFF. Turn on broiler. While broiler is heating up, add cheese slices in every other potato slice and bacon in the other slices.

BROIL + SERVE. Combine remaining Italian dressing and Parmesan and drizzle over potatoes. Top with chives and broil for a few minutes. Serve warm and ENJOY!

Tips + Variations

Sweet Potatoes โ€“ In the US you can find these labeled as sweet potatoes. Typically Jewel and Garnet Sweet Potatoes. Outside of the US they are called yams. Be sure that they are all about the same size so they bake at the same rate. Also choose sweet potatoes that are medium in size. The larger ones work too but have to be baked much longer.

Here is another way to cut these potatoes that may be easier:

  1. Cut a thin piece off the bottom of the potato. This will provide a flat side and keep the potato from rolling when you place it on the pan to bake.
  2. Place two chopsticks, or the handles of two wooden spoons, parallel to each other with enough space in between to set a potato.
  3. Set a potato between the parallel spoon handles. 
  4. The spoon handles act as a guard and stop the knife from slicing all the way through the potato. 
  5. Use a sharp knife to slice the potato into thin strips. 

Variations

  • Use other favorite cheese like pepper jack, Monterrey or mozzarella
  • Add more flavors with garlic, oregano, parsley, salt and pepper etc. 
  • Delicious Combinations include: Pecans and maple syrup, Cinnamon and sugar, Garlic herb butter
  • Plain Jane with butter

Storing Tips

STORE leftovers in an airtight container in the fridge for 4-5 days.

To reheat: place them in the oven at 350ยฐF until warm and crisp, about 5-7 minutes. A toaster oven also works. You can even use the microwave, but they won’t be as crispy.

Ingredients 

  • 4 sweet potatoes
  • 1/2 cup Italian dressing divided
  • 12 slices bacon cooked and chopped
  • 4 oz cheddar cheese cut into 48 slices
  • 1/4 cup grated parmesan cheese
  • chopped fresh chives

Instructions 

  • Preheat oven to 450.

    Step 4 says “brush with half the melted butter” but butter is not in the ingredients. And the other half is never used?
