I’m Kristin from Yellow Bliss Road back with another super easy dinner recipe for you that I promise your family will LOVE! 

This Creamy Fiesta Chicken is a quick and easy recipe that cooks all day in your slow cooker. The sauce is rich, creamy and super flavorful, and the chicken is tender and delicious.

I love that it’s full of ingredients that I always have in my pantry—canned tomatoes and corn, black beans, taco seasoning, ranch seasoning, onion, garlic, and cream cheese. These are staples that I regularly cook with, but had never used in quite this combination.

Let the slow cooker do the work!

THROW IT IN. You’ll start by putting in all of the canned ingredients, onions, and garlic in the bottom. Put the chicken on top and sprinkle with ranch and taco seasoning.

COOK. You can cook it on low for 4-6 hours, or high for 3-4. I prefer cooking it on low because I think the chicken comes out more tender that way! After that time is up, shred the chicken (any of these methods work great), add the cream cheese on top to soften (but don’t mix in yet). Cover and cook for 30 more minutes on LOW.

STIR & SERVE. After 30 minutes, stir in the cream cheese and serve however you prefer!

Instant Pot Instructions

Place all of the ingredients (minus the cream cheese) in the instant pot. Press the poultry button and add 5 minutes. Cook the chicken and all of the other ingredients for a total of 20 minutes. Let the pressure naturally release and if need be, manually release it towards the end.

Add in the block of cream cheese and put the lid back on the instant pot to keep the heat in and allow the cream cheese to soften and melt into the mixture. Take the lid off, stir and serve!

Great with Mexican Rice

I served the slow cooker creamy fiesta chicken on a bed of my favorite Mexican Rice and watched my daughter scarf more than half of her portion before I’d even sat down.

You could also serve this over rice, in tortillas (wouldn’t this make a fantastic burrito??), with pasta noodles, or just on it’s own. I am already craving it and can’t wait to make it again!

Topping Ideas:

Avocado, sour cream, pico de gallo, freshly squeezed lime/lemon juice, guacamole, cilantro, and shredded cheese would be great additions to this dish.

Ingredients 

  • 2 lbs boneless skinless chicken breasts about 2-3 breasts
  • 1/2 packet dry Ranch dressing mix (about 1 tbsp)
  • 1/2 packet taco seasoning (about 1 tbsp)
  • 10 oz Rotel tomatoes
  • 1 can yellow corn drained
  • 1 can black beans drained and rinsed
  • 1/2 medium onion diced
  • 2 tsp minced garlic
  • 8 oz cream cheese
  • salt

Instructions 

  • Combine corn, rotel, black beans, onion, garlic in the bottom of a slow cooker. Place chicken on top and sprinkle with taco seasoning and Ranch mix.
  • Cook on low 4-6 hours or on high 3-4 hours. (I prefer low).
  • Shred chicken in the slow cooker. Set cream cheese on top of the chicken to soften. Cover and turn slow cooker to low for 30 minutes.
  • Stir in cream cheese and serve chicken mixture over Mexican rice or with pasta or tortillas.

    This tasted so awesome, thank you for posting this!! The only thing i changed in the recipe was i did not add the Corn (not my favorite thing to add in recipeS Sometimes). Also I was ablE to get about 6 servings with Each servEd on a bed if Rice. 🙂 thank you again, it was so crEamy and delightFul!!
