We LOVE sandwiches!!

Every since we’ve been married (10 years+ now), we’ve had sandwiches for dinner at least one night a week. That make sound crazy to you, but we usually change it up and they’re usually paninis or some sort of fancy grilled cheese. Other times, it’s just regular sandwiches or regular grilled cheese, but we just love it. My kids are obsessed with them too, so we always know it’s a simple and quick dinner idea that everyone will love. Recently, we tried a new recipe for Bruschetta Paninis and they were a hit!! We’ve always loved Bruschetta so we knew these would be good. The sandwiches include basil, tomato and mozzarella so it also has that Caprese taste to it, which we love. What we love most of all is that they are easy and quick and taste like a sandwich from a restaurant. If you are looking to change things up and add some extra items to your “grilled cheese” then give this recipe a try. I promise it won’t disappoint. š
Here’s the recipe:

Bruschetta Panini Recipe
Ingredients
- 4 slices sourdough bread
- 6 slices turkey
- 2 slices mozzarella cheese
- fresh basil leaves
- 1 tomato
- 2 tbsp mayo with olive oil
Instructions

Spread Mayo on back sides of bread and place back sides together.

Add turkey, cheese, basil and tomatoes.

Grill in panini press for about 3 minutes. If you do not have a grill, carefully place on skillet and cook for 4 minutes on each side or until cheese is melted. Serve warm. ENJOY!
The cheese melting out is seriously the best!!
We really loved the flavor combo of these ingredients and will definitely be making these again (and soon!)

I love sandwiches for dinner — I have GOT to get a panini press! I feel like that would at least make it feel a little different than the sandwiches we had for lunch… š Such a simple and yummy option. Even the kiddos would love it.
