Cheesy hashbrown casserole takes minutes to prep and is the perfect side dish for any dinner or holiday meal!
This cheesy hashbrown casserole reminds me of the Funeral Potatoes we’ve made for years and years, but it’s even easier!!

all-time favorite Casserole
We’ve discussed our love of potatoes many a time here on Lil’ Luna. One of the best ways to enjoy them is in casserole form, and although we have plenty of potato casserole recipes, this cheesy hashbrown casserole is another favorite.
It’s great as a side dish for holidays or just a plain ol’ weeknight dinner.
And the best part is we usually have these ingredients on hand at all times. This dish is an all-time favorite!

A Quick Prep Recipe!
This hashbrown casserole is very simple and quick!
PREP. Preheat oven to 375°F.
COMBINE. In a large bowl, combine hash browns, bacon, soup, sour cream, and 1 cup of cheese. Mix until well combined and spoon into a greased 13×9 baking dish.
COOK. Bake for 30 minutes. Take out and sprinkle on the last of the cheese and cook an additional 10 minutes.

Change it up!
While tasty as is, here are a few variations and suggestions to change this easy hashbrown casserole up a bit!
Potatoes. This is the backbone of the dish!
- Use cubed hashbrowns. You may need to cook it for a bit longer since the potatoes are thicker.
- Use fresh russet potatoes and make your own hash browns. Peel the potatoes then use a cheese grater to shred the potatoes (24 ounces). Place the shredded potatoes in a bowl of cold water to soak for 30-60 minutes. Drain, pat dry, and use in the recipe.
Cheese. Change up the flavor of these cheesy hashbrown potatoes by using different cheeses.
Additions. Add flavor with any of these ideas:
- Veggies. diced bell peppers, green onions, or avocado
- Add spice. chiles or red pepper flakes
- Meat. Use cubed ham in place of bacon bits
- Crunchy topping. crushed cornflake topping, potato chips, Ritz crackers, or bread crumbs on top
Mexican version. Add some green chiles and Mexican cheese.

recipe tips
While simple, these tips will help you achieve the best cheesy hashbrown casserole recipe.
Bacon. It does call for bacon, but you can just use pre-cooked bacon if you’re going for easy. We love that it requires little work and is so delicious too. If you want to use freshly cooked bacon, try out this Bacon in the Oven recipe.
Thawing potatoes. The best way to thaw the hashbrowns is to pour the bag of frozen potatoes into a colander. Place the colander in a pan and let the hashbrowns thaw at room temperature. The excess liquid will drain out of the colander.

Storing info
Make ahead of time. We love that this side dish can be made up to 48 hours in advance. Just cover and store in the fridge until ready to bake. Add a few minutes to the cooking time if the casserole is still cold.
FREEZE. Wrap the cheesy hash brown casserole with plastic wrap and again with aluminum foil, and store in the freezer for up to 2 months. Thaw completely and remove wrappings before baking. Bake in the oven at 350°F, until heated through.
REHEAT. If you have leftovers, reheating your best cheesy hashbrown casserole is a cinch!
- Preheat your oven to 375°F and reheat for 7-10 minutes, or until it’s warmed through.
- Reheat in the microwave until heated thoroughly. The time will vary depending on your microwave.

This recipe was easy and very good. I didn’t have any leftovers. However, I did add 4 eggs, 1/2 C milk, and chopped red and yellow bell peppers. This is definitely getting made again.
Thank you for sharing what you did!! I am so glad you like it!
Pretty delicious casserole. Everyone will dive into these cheesy potatoes! Can substitute other cheeses, I prefer to fresh grate my cheese as the flavor seems increased and the cheese doesn’t get as rubbery for leftovers.
So delicious! Always a hit when I take it to family gatherings!
This is another easy and delicious casserole! Love this recipe and so does my family! Great side for chicken!

Love the bacon added in this from other recipes. An easy staple to add to any gathering.
Love this recipe! Similar to the funeral casserole but you can change it up with different veggies and such to get different yummy flavors!
This recipe is delicious! You can at it as a side, but you can also eat it as a meal in my opinion. I used the cubed ham instead of bacon as suggested in the tips and added green onions. It was so easy to make with no special equipment needed. That’s a bonus for me. It’ll be a go to recipefor sure. Everyone loved it. Thanks for another great recipe.

Cheesy Hashbrowns are the best. They are a family favorite at our house.
This is my all time favorite casserole! I make 2 of these for each side of my family every year for Thanksgiving! Love how simple it is to throw everything in a bowl, dump it, & bake it! I love the taste of the cheesy potatoes, made smooth by the sour cream, with the crunch of the cracker topping! 😋
My favorite side dish for any holiday besides green bean casserole. It’s so easy to make that I can make it any time of the year.
I want to make this for breakfast

Have been making these for years
Who doesn’t love cheese, potatoes and bacon all together in one dish?!!

I LOVE, LOVE, LOVE this recipe! It is the goodness of hasbrowns with cheese and top it off with bacon. We have made this a few times and love having it Thanksgiving morning so we fill up until the big turkey meal is ready!
Will definitely be making this for Thanksgiving. Hosting for the first time. These potatoes look like they will be perfect for all ages and the easy prep and baking will allow me to focus on other foods that require more energy.
I will be making this recipe for Thanksgiving this year! Love the bacon with the hashbrowns in this side dish!
Will definitely be making these for Thanksgiving! So good!
What size bag hash browns? Some bags are 20, 24, or 32 ounce…
I’d say the 24 oz bag, but honestly, any of them could still work. I’d shoot for the 24 oz bag or larger.
“Dump. Mix. Bake.” This is exactly what this recipe is. So easy to make with a delicious result. The full size is too big for just my family so I’ll divide it and freeze half for another night.
I really enjoyed this dish. So easy to put together and all the cheese makes this dish creamy and yummy.
This was the best weekend brunch, so hearty and delicious, our whole family loved it and I love how easy it was to make!
So good! LOVE potatoes of all types. This dish is absolutely perfect potatoes! Love these for breakfast OR for lunch/dinner! I could seriously eat these anytime!!
This is a cheesy & delicious dish that we make anytime we have guests! Super easy, too & a hit with everyone!
I’ve made this for years, but not with the bacon. That took it to a whole new level of tasty! I could seriously eat this every week. 🙂
This looks great! However, I am still confused about the soup. Is it one can of soup or two? Is it one can of cream of chicken and one can of mushroom or one can of cream of chicken OR mushroom. Please clarify. Thanks so much.
Great question! So there is actually a kind of condensed soup called Cream of Chicken and Mushroom. The recipe calls for one 10 oz can of that. If you can’t find it though, you could use half a can of each or just a full can of whichever flavor you prefer.
Thanks for this Krystin! It promises so much yumminess! I’m making this for our Mother’s Day brunch tomorrow — first family gathering since the pandemic began :-). On the off chance you see this before then, quick question. The recipe calls for salt and pepper but doesn’t indicate how much of each. Advice?
Hi Brian! I hope the brunch went well. How exciting to get to be with your family again! Salt and pepper is just to taste, so however much you personally prefer. Hope the casserole was hit! 🙂
I love it but the navigation to different foods could be better.
Thanks for your feedback! Glad you enjoyed the dish!
Simply put…crazy easy and so good!!
Do you need to thaw and drain hash browns?
You need to thaw, but you don’t need to drain. Enjoy!!
I made this for my BOYFRIEND’S family Christmas get together, it was my first time meeting most of them, and it was a hit. I will definitely keep this recipe for the future.
I am glad you tried it!! I am so glad they liked it! Thank you 🙂
Oops, i made it with just one can, but it still tasted deli!
I am glad it did!! Thank you for letting me know!
I plan on making this tomorrow, wondering if I could prep and make it all tonight but let it set in fridge till tomorrow morning
You sure could 🙂 Enjoy!!
Made this one night with pancakes for dinner. Fabulous!!
Thank you for giving it a try! It’s great with pancakes!
You are one of those beautiful creators that is always full of great surprises. Thank you so very much for this one !
You are so sweet! Thank you so much!
This looks amazing! Cheese, bacon, and potatoes!! Love the cheesy potato dish and will try next weekend.
hey girl- this looks amazing!
When I make cheesy hashbrown casserole I leave out the sour cream and add one packet of dry ranch dressing to it. My grandkids love it and ask for it everytime we have a holiday. Try it!
Sounds good, I’ll have to try that! Thanks!
Found the right soup by the way! And made this last week — and this week both sets of missionaries, the Elders and the Sisters, commented on how much they loved the ‘funeral’ potatoes I made them last week!!! So thank you — again!!
Hi Donna, is it two separate cans of soup or one can of cream of chicken with mushroom?
It was one can of both!! Such a good combo. Make these – they are yum yum!!
Thanks Donna!
It doesn’t get better than this for Thanksgiving!
I’ll take that whole pan please! This casserole is all things good in this world – YUM!
Oh Kristyn – I am going to make this for sure. But is there a soup that is BOTH cream of chicken and mushroom, or one can each? You know me, such a goof when it comes to common sense cooking!! (If I get the answer today I am making this for our missionaries tomorrow!!)
Gotta love one-dish meals! I bet this is a hit with everyone!
Cheese AND bacon AND potatoes!! I’m on it.
I think that I am going to have to make this for my husband soon. This looks & sounds very similar to the hashbrown casserole that they serve at Cracker Barrel, and he LOVES it. 🙂
I can SO relate. Food, potatoes, carbs–they equal happiness!! This looks amazing! Love a good cheesy potato dish!
