Sausage Soup is one of our family’s favorite soups! It’s a hearty, flavorful dinner filled with Italian sausage, vegetables, beans, and tender spinach. The sausage and garlic give the broth so much savory flavor, while carrots, zucchini, tomatoes, and great northern beans make every bowl filling and delicious.

Sausage Soup Ingredients
- Italian sausage (1 pound): Adds savory flavor, protein, and makes the soup hearty.
- Minced garlic (1 tablespoon): Adds bold flavor and pairs perfectly with the sausage.
- Beef broth (2 cans, 14 ounces each): Creates a rich, savory soup base.
- Italian style stewed tomatoes (1 can, 14.5 ounces): Adds tomato flavor, herbs, and texture.
- Sliced carrots (1 cup): Adds sweetness, color, and tender bites.
- Great northern beans, Undrained (1 can, 14.5 ounces): Adds creaminess, protein, and help make the soup more filling.
- Zucchinis cubed (2 small): Adds tender vegetables and a mild fresh flavor.
- Spinach, packed, rinsed and torn (2 cups): Adds color and wilts gently into the hot soup.
- Ground black pepper (ยผ teaspoon): Adds simple seasoning and a little warmth.
- Garlic salt with parsley flakes (1-2 teaspoon): Adds garlic flavor, salt, and a little herb flavor.
How to Make Sausage Soup
SAUSAGE. Brown Italian sausage along with minced garlic in a large soup pot on the stove.


VEGGIES. Stir in broth, Italian-style stewed tomatoes, and sliced carrots, then season with garlic salt and black pepper.
- Reduce the heat, cover the pot, and simmer for 15 minutes.
- Stir in the entire can of Northern beans and 2 small cubed zucchinis. Cover and simmer for another 15 minutes or until the zucchini is tender.
- Remove from the heat and add 2 cups spinach leaves. Cover and let the soup sit for another 5 minutes. (The heat in the pot will cook the spinach leaves.)
Slow Cooker Directions
Brown sausage and garlic and put in the crockpot. Add the remaining ingredients (except the spinach) into the slow cooker. Cover and cook on LOW setting for 5-7 hours, or HIGH for 2-3 hours. When there are about 30 minutes left stir in the spinach. Cover and finish cooking.


Kristyn’s Recipe Tips
- Brown the sausage well before adding the broth so the soup has the best flavor.
- Drain excess grease from the sausage if needed before adding the other ingredients.
- Add the beans undrained as written to bring extra flavor and body to the broth.
- Simmer until the zucchini is tender but not mushy.
- Make-ahead tip: make the soup ahead and refrigerate it, then reheat gently and add a splash of broth if it thickens.

Recipe FAQ
Brown the sausage and garlic and then sautรฉ the carrots until softened. Place all the ingredients, except the spinach into a large Ziploc bag. Store in the freezer for 4-6 months. Thaw, bring ingredients to a boil, and then simmer for 15 minutes. Add spinach in the last 5 minutes.
Store leftover soup recipe in an airtight container(s) in the refrigerator for 3-4 days or freeze for 3-4 months. Reheat in the microwave or stovetop.ย
