End of the Rainbow Cupcakes

It’s not like the next cupcakes are anything new. There are a gazillion adorable rainbow cupcakes out in blog land but thought I would do my version of them today. I’m calling these ones: End of the Rainbow Cupcakes….

What do you think?

They were inspired by these beauties that I found at Target in the Easter section for a few bucks:

They are obviously meant for Easter for Easter Basket Cupcakes, but I thought “those kinda look like Rainbows….hmmmm….I think these would be great for a St. Patrick’s Day Rainbow Cupcake!” So, that’s what I did!

{You can notice that my kids liked them too and shook them about a bit breaking a few of them – haha!}

SUPPLIES:

-Cupcake mix and ingredients to make

-Green frosting

-Wilton Cupcake Easter Basket Kit

-Rolos/Gold Coins

-Grass Tip

DIRECTIONS:

All I did was make regular Funfetti Cupcakes…

Then I used my grass piping tip to add grass to the top.

{Don’t look too close cuz I can’t pipe worth beans!}

I then stuck in the rainbows and threw on a rolo for the “pot of gold”.

You can even throw on some Chocolate Gold Coins instead of Rolos. I found mine at Joann’s in the checkout section.

And if you’re looking for an even easier version you can do these which are just frosted with a gold coin in the middle.

Fun, easy and festive. I LOVE it!

    1. Thank you! One of these days I may use them for Easter cupcakes but knew they would be super easy St. Patty’s cupcakes. Let me know if you try them out. ๐Ÿ™‚

  1. These are great! I am hosting a St. Patrick’s day party for my 3 year old and his friends and they will love these! I’m sure I will not be able to find the kit, but I have some left over candy canes from Christmas that I think I can use to make the rainbows! Thanks for posting!

    1. You’re welcome! Leftover candy canes would be perfect – especially the Spree or Rainbow kind. Great idea!! Thanks for stopping by. ๐Ÿ™‚

    1. You’re so sweet, Lisa!! Glad you like them although I’m sure yours would have turned out way more professional than mine. ๐Ÿ™‚

    1. Thank you – glad you like them! Were you able to find the kit? They are with the Wilton items in the Easter section. ๐Ÿ™‚

    1. You’re so sweet, Emily! My piping skills are horrible! I took a Wilton cake decorating class like 10 years ago and haven’t touched my stuff since then but I will admit the grass tip makes it easier. ๐Ÿ™‚ LOL!

    1. Thank you! So glad you like them…. and so fun your hubby is Irish and probably has an accent too! SO fun! ๐Ÿ™‚

  2. those are great. I love the pot of gold. I would have tried really hard to come up with something for that. I like the gold coin idea too. I had no idea that they make cupcake basket kits with partial candy canes like that!

    1. Thank you so much, Brittany! And I had no idea they sold them either until I saw them at Target. I think they are new this year. ๐Ÿ™‚ Thanks for stopping by and say hi. Hope you can come back again soon. XO
