Even without meat, this veggie panini is a delicious hot sandwich filled with cheese, tomato, avocado, spinach and more.
We love to make sandwiches for lunch and love to change them up, like we did with this no meat panini. Not only is it great for lunch or dinner, but it’s delicious and is great served with a salad – like our easy Caesar salad or pasta salad.

We are all about them and love finding new ones to add to the meal rotation. Today’s recipe happens to be one of those simple and yummy recipes that we LOVE to make for lunch or dinner.
You see, we are HUGE fans of sandwiches and usually make them once or twice a week. In fact, we have grilled cheese sandwiches for lunch every Sunday because we ALL enjoy them.
Recently, we changed things up and decided to make a Veggie Panini. We’ve made Panini’s countless times and often make them for ourselves on the days the kids have their grilled cheese, but we decided to throw in some “extra” ingredients and have now found a new favorite.
The best part of all is that they’re SUPER simple and take just minutes to put together.
Best ingredients to use
BREAD.ย If sourdough isnโt your cup of tea you can use focaccia, ciabatta, or a baguette. These breads are great for paninis because they can withstand being pressed or grilled and still retain some of their fluffiness.
CHEESE.ย You can use fontina, muenster, provolone, gruyere, swiss, or cheddar. Basically any cheese that melts well would work well for a panini.
VEGGIES.ย Aside from the vegetables listed in the recipe, you could also add zucchinis, bell peppers (especially red), onion, or eggplant slices.
Paninis are basically a glorified sandwichโsimple to assemble, but so comforting, warm, and delicious. We love to serve it with some pasta salad, coleslaw or even roasted brussel sprouts – so good!!

Veggie Panini Recipe
Ingredients
- 2 slices sourdough bread
- light mayo
- butter
- 1 slice colby jack cheese
- 6 leaves spinach
- 2 slices tomatoes
- 1/2 avocado sliced
Instructions
- Begin by cutting up your avocados and tomatoes.
- Then butter your sourdough bread slices on each side.
- Add mayo, spinach, tomatoes and cheese to your sandwich and place on a skillet, or in a panini maker. Cook for a few minutes on medium heat.
- Once done, add your avocado slices and serve warm.
