Lemon Cake Mix Bread

I’m no expert with yeast, which means I make many quick bread recipes and not many yeast breads. My mom, on the other hand, has been working with yeast all her life and can tackle ANY bread recipe. Fortunately for me, she found a great White Chocolate Lemon Bread recipe that contains NO yeast. She tried it out and made a loaf for each of the families. The loaf was literally gone in MINUTES (no joke!) It was SO GOOD!

I was thrilled to find out that it was a non-yeast bread recipe that was delicious AND simple. Some may argue that using a cake mix to make bread is cheating but I say “Who cares? It’s easy and yummy!” 😉

The hubby claims this is his new favorite bread. I may have to agree with him. I’m not a HUGE Lemon fan, but this recipe had just the right amount of lemon that it wasn’t overwhelming at all. And the glaze on top was definitely my favorite part. I can’t wait to have some more of this delicious bread!! If you like Lemon and White Chocolate I’d definitely give this one a try.

  • Substitute plain Greek yogurt or cottage cheese for sour cream. Just make sure that you aren’t using the low fat varieties.

  1. I have tried a TON of lemon recipes. Lemon would have to be one of my favorites. I’ve never heard of this recipe, but I am definetely trying it. It looks too good not to! Thanks for sharing.

  2. Kristyn, this bread looks delicious!! I was super nervous about using yeast too until I discovered a thermometer especially for yeast! It gives you this little window of how hot your water has to be to make the yeast grow, and now I’m making perfect pizza dough. And . . . realizing this sounds like spam. I swear I don’t sell them, lol!

    1. I’m just now seeing this comment. Sounds like I need to get me one of those thermometers!! Thanks for the tip. 🙂

  3. Looks delicious!! I agree with you….I’m a little hesitant about making anything with yeast. I have tried a couple of recipes and they actually turned out pretty good. But, it I can make bread without yeast, it is great!! Thanks for the great recipe!!

  4. I love anything with LEMON but adding that white chocolate pudding mix… makes this bread look divine 🙂 It would be fun to drizzle melted white chocolate over the bread as well!

  9. So the glaze calls for lime juice. Is that a misprint? You just don’t mention lime anywhere else…..

    1. I made it! It came out beautifully and everybody loved it and said it was “crazy good”!!!

      1. YAY! SO glad to hear it. Thanks for stopping by to let me know how it turned out. 🙂 Have a great day!

  10. This bread is amazing! I cooked it a little longer than I should, but now I know how long it’ll take w/ my oven & loaf pan. I am NOT a baker, thanks for giving me back the confidence to try! I’m eating leftovers as I type this… YUM!

    1. Thanks for stopping by Tabitha! SO glad you were able to make this and that it turned out great!! Be sure to try my other bread recipes because they are just as good AND just as easy! Have a great day. 🙂

    1. HI Pam. So sorry for the confusion… we used small paper pans, but I added in the notes different times for different sizes of pans. 🙂

  11. I read through the comments to look for answers to the questions I had. Several had the same questions that I do, and they were not answered. What size pans (taking it is regular size bread loaf pans) and how many, as the directions say to pour into greased loaf pans??? Also, directions to mix powdered sugar with lime juice. Life isn’t listed as an ingredient. Is it Lime or Lemon?

    1. You can make it as 2 regular size loaf pans or smaller ones… I added some info under NOTES above. And the glaze calls for lemon… not lime. Sorry about that. :/

    1. I’m sorry for all the confusion… it’s lemon. I had new baby, new move brain which means it was mush at the time when I posted this. :/

  12. So, where does the white chocolate come from? I’ve read the recipe carefully and the notes but I can’t find the white chocolate anywhere but in the title.

  13. Why the hell would anyone call this a “bread”?!?!?!?! It’s a freaking packaged cake mix combined with a packaged pudding mix!!!!!!!!

  14. I have made this 2x and it is excellent! It is my new favorite! It is so delicious that when I make it, I have to take it somewhere so I do not eat it all!

    1. LOL!! Isn’t it so good?? I love sweet bread recipes (especially those that don’t involve yeast)! So glad you like it, and thank you for stopping by. 🙂

  15. I made cupcakes. These are so wonderful. I love lemon so right up my alley! Besides, they are pretty too.

  16. This recipe looks amazing and I cannot wait to make it, but I have a quick question. Adding water to the mix is not listed as an ingredient, is that correct? Look forward to your reply and to both gifting and eating this delicious lemon piece of heaven. Thank you!

    1. Yes, that’s correct, Rhona… there is no water in the recipe. Let me know how it goes. I promise you’ll love it! ;D

        1. Btw, my entire reply did not go through. Ugh! I am looking forward to gifting these tomorrow, on a picture frame (as the platter, featuring your recipe inside), with a piece of parchment paper around the middle and tied with yellow and white twine! I bet all my girls will adopt this recipe as a go-to in the future! Thanks and I’ll keep you posted!

  17. Hello Kristyn, I just recently stumbled across your awesome site a few days ago while I was on Pinterest. I tried your Creamy Swiss Chicken Bake the other night and it was absolutely heavenly & Delicious! So of course I just had to explore your site even more to see what other tasty morsels I wanted to try. lol 🙂 So many easy & scrumptious looking recipes I have already saved to try, but I was a little confused when I came across a few of your recipes like this white chocolate lemon bread one in which you mention a portion (small) white chocolate instant pudding mix instead of an actual weight in ounces or grams. I am aware the Jello company makes many flavors in these instant puddings, and they can be purchased on Amazon, but I do not use Amazon at the moment, and since I live in a smaller city in BC, Canada, I do not have access to all Jellos’ pudding flavors. Pretty limited here lol. The Giant Mega stores do not even spoil us with stocking the limited edition holiday flavors 🙁 You say (small) size, but I am only aware of one size in these puddings 99-133g approx. for most flavors, and the awesome white chocolate one is not available here at all, except in the fat free version (a much smaller size at only 32g). No access either to a no-name brand of white chocolate instant mix. I know you mention vanilla pudding as a replacement on a couple recipes, but I would much rather have that subtle white chocolate flavor lol. So my curious question in my confusion is … what size weight is small and would the fat free (32g) be considered too small? 😉 Thank you so much for sharing your delicious recipes so generously. I will be baking & cooking up a storm for years to come 🙂

    1. Oh, thank you so much!!! I’m so glad you stopped by!! The small boxes are like 3.9 ounces. I know that some places do not carry certain things, so I’m so sorry about that!! I know you said you would like the white chocolate flavor, but vanilla pudding is the next best. Next time you’re visiting somewhere, you’ll have to check their stores and stock up 🙂 Let me know if you have any other questions!!! Happy baking/cooking!!

      1. Thank you so much for your reply and for letting me know Kristyn. I look forward to giving this one a whirl through the kitchen with a couple of the fat free smaller white chocolate pudding mixes I can get my hands on here lol 😉 Will keep me eyes pealed for the regular white chocolate and any holiday ones during the festive seasons 😀

  18. Would love to copy your recipes ! Am 83 yarsold and a not great using a compute. Therefore do not do the ebook thing, however, would love to be able t copy your recipes! I love to cook. Thank you very Much! Ou a beautiful young lady!

    1. Thank you so much!! You are so nice 🙂 You could always print the recipes. When you are inside the recipe box, you should see the print option. Just make sure you check your printer settings & it should be good to go 🙂 Good luck!

  19. Stupid question but what weight should the lemon cake mix and the pudding mix be? Cant wait to make this for my hubby who loves anything Lemon. Thanks

    1. The lemon cake mix is about 15.25 ounces & the pudding is like 3.4 ounces or close to that. He will love it!

  20. I still cannot get your recipes to copy! I can get to the print and click on that but the recipe does get to the printer!

    1. Could you write them out? I know that’s what my mom likes to do, when she is having computer problems. It’s just an option.

  21. The printer is ready the page comes up with the recipe and it says “print”, but there is a gray page that comes up but no recipe on there.

    1. I’m not sure why it does?? I just tried on my computer & the recipe card pops up, not a gray blank page. It might be something on your end?? Not sure what it could be :/ I hope you get it figured out 🙂
