White Chocolate Lemon Bread

Lemon Cake Mix Bread

I’m no expert with yeast, which means I make many quick bread recipes and not many yeast breads. My mom, on the other hand, has been working with yeast all her life and can tackle ANY bread recipe. Fortunately for me, she found a great White Chocolate Lemon Bread recipe that contains NO yeast. She tried it out and made a loaf for each of the families. The loaf was literally gone in MINUTES (no joke!) It was SO GOOD!

I was thrilled to find out that it was a non-yeast bread recipe that was delicious AND simple. Some may argue that using a cake mix to make bread is cheating but I say “Who cares? It’s easy and yummy!” 😉

The hubby claims this is his new favorite bread. I may have to agree with him. I’m not a HUGE Lemon fan, but this recipe had just the right amount of lemon that it wasn’t overwhelming at all. And the glaze on top was definitely my favorite part. I can’t wait to have some more of this delicious bread!! If you like Lemon and White Chocolate I’d definitely give this one a try.

How to make White Chocolate Lemon Bread

COMBINE. Mix cake mix, pudding mix, oil and eggs in a bowl with a beater until well combined. Add sour cream, lemon juice and lemon zest. Mix by hand. Pour into greased loaf pans.

BAKE. Bake at 350 for about 45 minutes (For smaller loaf pans, bake for about 15 minutes). Let cool.

GLAZE. Poke holes in the top of the bread and drizzle with glaze (To make, mix 1 ½ cup powdered sugar, juice and zest of one lemon – add more lemon juice if glaze is too thick). ENJOY!

Tips + Storing Info

  • Use a different flavor of pudding mix for the glaze, lemon or vanilla pudding make great options to sub for the white chocolate.
  • Substitute plain Greek yogurt or cottage cheese for sour cream. Just make sure that you aren’t using the low fat varieties.
  • Make mini-loaves of this bread. Fill your mini pans no more than ½ way full and check on them every 5 min after 25 min of cooking. Once a toothpick comes out clean they are ready to take out of the oven.

Make this bread ahead of time and FREEZE (before you add the glaze) for up to 6 months. Once it has cooled simply wrap it in plastic wrap and then store it in a Ziploc freezer bag or wrapped in aluminum foil. It would also be best to wait to add the glaze until after you have thawed it in the fridge overnight, and then brought it to room temperature.

STORE covered in in the fridge for a few days.

  2. Kristyn, this bread looks delicious!! I was super nervous about using yeast too until I discovered a thermometer especially for yeast! It gives you this little window of how hot your water has to be to make the yeast grow, and now I’m making perfect pizza dough. And . . . realizing this sounds like spam. I swear I don’t sell them, lol!

  11. I read through the comments to look for answers to the questions I had. Several had the same questions that I do, and they were not answered. What size pans (taking it is regular size bread loaf pans) and how many, as the directions say to pour into greased loaf pans??? Also, directions to mix powdered sugar with lime juice. Life isn’t listed as an ingredient. Is it Lime or Lemon?

    1. You can make it as 2 regular size loaf pans or smaller ones… I added some info under NOTES above. And the glaze calls for lemon… not lime. Sorry about that. :/

  17. Hello Kristyn, I just recently stumbled across your awesome site a few days ago while I was on Pinterest. I tried your Creamy Swiss Chicken Bake the other night and it was absolutely heavenly & Delicious! So of course I just had to explore your site even more to see what other tasty morsels I wanted to try. lol 🙂 So many easy & scrumptious looking recipes I have already saved to try, but I was a little confused when I came across a few of your recipes like this white chocolate lemon bread one in which you mention a portion (small) white chocolate instant pudding mix instead of an actual weight in ounces or grams. I am aware the Jello company makes many flavors in these instant puddings, and they can be purchased on Amazon, but I do not use Amazon at the moment, and since I live in a smaller city in BC, Canada, I do not have access to all Jellos’ pudding flavors. Pretty limited here lol. The Giant Mega stores do not even spoil us with stocking the limited edition holiday flavors 🙁 You say (small) size, but I am only aware of one size in these puddings 99-133g approx. for most flavors, and the awesome white chocolate one is not available here at all, except in the fat free version (a much smaller size at only 32g). No access either to a no-name brand of white chocolate instant mix. I know you mention vanilla pudding as a replacement on a couple recipes, but I would much rather have that subtle white chocolate flavor lol. So my curious question in my confusion is … what size weight is small and would the fat free (32g) be considered too small? 😉 Thank you so much for sharing your delicious recipes so generously. I will be baking & cooking up a storm for years to come 🙂

I know you said you would like the white chocolate flavor, but vanilla pudding is the next best.     1. The lemon cake mix is about 15.25 ounces & the pudding is like 3.4 ounces or close to that. He will love it!
