17+ St. Patrick’s Day Desserts

Sometimes I wish I could be the mom who does all the great crafts with my kids and bakes all the fun meals for the holidays, etc., etc., but I just don’t have the time to do that ALL THE TIME! I know you may think otherwise, but I really am not Super Mom! As much as I try to do all the fun traditions and such I’ve just realized that it’s not gonna happen for every holiday, so if I can do at least one fun thing then I’m happy. Having said that I will not be preparing an “ALL GREEN” meal on St. Patrick’s, but thought I could muster up at least one green dessert for next week. Still haven’t decided which one I’d do but but wanted to share with you 17+ St. Patrick’s Day Desserts that I will be choosing from. These all look TO-DIE-FOR and I love that a lot of them include mint because that is one of my favorite ingredients in desserts.

SO – the questions I have for you are:

1 – Will you be cooking lots of green for the fam on St. Patty’s?

and

2 – Which of these desserts would you make if you had to choose. I need help deciding.

It’s not like the next cupcakes are anything new. There are a gazillion adorable rainbow cupcakes out in blog land but thought I would do my version of them today. I’m calling these ones: End of the Rainbow Cupcakes:

They were inspired by these beauties that I found at Target in the Easter section for a few bucks:

They are obviously meant for Easter for Easter Basket Cupcakes, but I thought “those kinda look like Rainbows….hmmmm….I think these would be great for a St. Patrick’s Day Rainbow Cupcake!” So, that’s what I did!

Pot of Gold Pops from Joy in the Jumble

Around Joyin the Jumble, we are big fans of Oreo Truffles…

Not just because they taste good,

But they are easy to make, and easily customizable for every whim:)

We never really celebrated St. Patrick’s Day at our house before.

Since we love rainbows, and the color green…

I figured it was about time to remedy that:)

Pot of Gold Pops

Yields Approx. 13 large Pops or 26 small Pops

30 Oreos, pulverized

8 oz Cream Cheese
1+ cup Guittard Mint Chips

1+ cup Black or Chocolate Melts

1 Tablespoon Vegetable Shortening, for thinning

Gold Sprinkles

Sucker Sticks

Lucky in Love Prints

I’ve decided to make some more St. Patty’s Decor. This week – a printable.

I decided to make some Lucky in Love Prints. Thought it would be cute, and as one reader put it - thought it might not scream “blarney.” LOL.

I love this saying just because I truly feel Lucky in Love. I’m married to my best friend in the whole world. Not only is he the best hubby and father, but he helps me with all my projects. He even asks if I’ve taken a picture yet before he eats his dinner! What a good guy, right? We’ll, he’s definitely my best-ie, and I love that I want to spend time with more than anyone else and that we have so much fun together. Sure crazy about him.

Any who….

I was able to print and add this printable to a frame to include with my St. Patty’s Mantel. Nothing too fancy. Just a few touches of green and St. Patrick’s Day-ness.
