Alright, let’s chat about apple enchiladas! Yep, you heard that right.

It’s a sweet twist on a classic dessert, and trust us, it’s a game-changer. Think warm, gooey cinnamon-sugar apples wrapped in tortillas, baked to perfection, and topped with a brown sugar sauce.

This recipe is a perfect example of Mexican fusion, where we take familiar flavors and give them a fun, unexpected twist. In this case, we’re taking the comforting flavors of apple pie and combining them with the familiar format of enchiladas. The kids think they are SO fun and we love that they’re easy!

You get all of those favorite apple pie flavors but in a ridiculously simple dessert. Fill the tortillas with pie filling (one of our go-to shortcuts), make the sauce, and bake (for about 25 minutes). That’s it!

Now you just need to choose if you pair it with Whipped Cream or Ice Cream – or maybe both!!

Apple Enchilada Ingredients and Substitutions

  • 1 (21-ounce) can apple pie filling Leave the apple pie slices as they are, or cut the slices into smaller pieces to make the enchiladas easier to eat. You can use Homemade Apple pie filling, but make sure the filling has simmered long enough for the apples to become soft and for the sauce to thicken.
  • 6 (8-inch) flour tortillas – We use store-bought flour tortillas to keep this dessert extra simple, but you can use whole wheat or Homemade Flour Tortillas.
  • 1 teaspoon ground cinnamon, or more to taste
  • ½ cup granulated sugar
  • ½ cup packed brown sugar Both light and dark brown sugar work.
  • ½ cup water
  • ⅓ cup butter We use unsalted butter, but salted butter can also be used.
  • cinnamon – or apple pie spice or Pumpkin Pie Spice
  • optional toppings Whipped Cream, Vanilla Ice Cream, or Caramel Sauce

How to Make Apple Enchiladas

  1. PREP. Preheat the oven to 350°F. Lightly grease an 8×8 baking dish and set aside.
  2. FILL. Microwave tortillas for 30-60 seconds to warm them up and make them more pliable.
    • Spoon apple pie filling along the center of each tortilla and roll up. Place, seam side down, in the baking dish.
  3. SAUCE. In a medium saucepan over medium heat, add sugars, water, and butter and bring to a boil. Reduce heat and simmer, stirring constantly, for 3 minutes.
  4. BAKE. Pour the sauce over the rolled tortillas. Sprinkle with extra cinnamon and bake for 20-25 minutes. Serve warm with a drizzle of caramel and ice cream or whipped cream.
  • For ease, we like to use canned apple pie filling to make this recipe but cooked and thickened Homemade Apple Pie filling can also be used.
  • Don’t forget to warm the tortillas, especially if they are older, to make them easier to roll.
  • Place the filled tortillas seam-side down to prevent the filling from spilling out during baking.

Can I add cream cheese?

Mix 4 ounces of softened cream cheese with ¼ cup powdered sugar and spread down the center of the tortillas before adding the pie filling.
