Cheesy Chicken and Rice

Cheesy Rice

We love trying new recipes and were so excited to try today’s Cheesy Chicken and Rice. The ingredients for this meal are staples in our home, so we were excited to make a few changes and try our own version of the recipe. It kind of reminds me of KFC’s Chicken Mashed Potato Bowl but with a Mexican twist. Yes, we did end up using Rice-a-Roni for added flavor but the combo of so many great ingredients made of think of the KFC bowl.

This version is not only filled with Rice-a-Roni but also with corn, black bean, chicken, cilantro, cheese, green chilis and more. It’s great as is baked to perfection, but just like the KFC bowl with gravy, this dish is even better with a dressing on top. We have several on the site that work great for this recipe, but these ones are our favorites:

If you are more of a salsa person, these salsas would also be great on this dish:

We love the combination of flavors this dish has and hope you guys enjoy it too!

I haven’t made it yet but was wondering on cheesy chicken and rice can you use a different bean? I also saw your chicken cream cheese taquitos can I have leave sour cream out? I’m allergic

    1. You can add whatever bean you like 🙂 I haven’t made the taquitos without the sour cream, but you could probably add a substitute instead ( if you like to use something else). Hope that helps!! Enjoy!

  2. Iam going to make the the cheesy bake recipe! What’s the sauce of your choice? Is that something else you add ?

    1. Cheesy rice recipe! At the end of recipe it says melt cheese and top with cilantro and sauce of your choice! What sauce? Thank you !

      1. I see 🙂 Sorry, about that. You could add salsa or a dressing. In the post I list a few of our favorites for dressings or if you like salsa, I listed some of our favorites of that too. I hope that helps. It is great with any of those, really. Or, if you have a favorite salsa, you could add that. Hope you like it!

  3. We really LIKed this! We did the avocado ranch dressing and it was so good! I loved the three dressing options and the flavor was really great for chicken and rice!
