Easy frosted lemon cake mix cookies are topped with a delicious lemon frosting. They come together in minutes and taste delish!
We have a few lemon cookie recipes on the site including our original Lemon Cookies, and even our Lemon Sugar Cookies. All of them are great, but we especially love how easy this frosted lemon cake mix cookies recipe is!

We love cake mix cookies, and even though we already have a lemon version, we wanted to try another recipe that was similar but frosted!
They are yummy AND really easy to make. You use a cake mix out of a box, which makes the recipe nice and quick (our kind of dessert).
If you are a lemon fan, then you’ll definitely love this cookie with the frosting that has a touch of lemon as well.
And if you REALLY want to kick it up a notch, you could even add lemon zest, nuts, or white chocolate curls along with the frosting.

PREP. Preheat oven to 375.
COOKIES. In a large bowl, beat cake mix, butter, shortening and egg until well combined. Using cookie scoop, scoop onto a greased cookie sheet.
BAKE. Bake for 9-11 minutes. Let cool completely.
LEMON FROSTING. Mix butter, powdered sugar, milk, vanilla, almond extract and lemon juice (optional) until well combined. Add more milk or powdered sugar depending on the consistency you like.
TIPS and storing
Line the pan with parchment paper to avoid cookies sticking.
To get a rounder, fluffier cookie, let the dough refrigerate at least 30 minutes. This will keep them from spreading as much
If you want to make the dough in advance, refrigerate dough up to a day ahead of baking. Or, freeze dough balls for up to 3 months.
STORE unfrosted cookies at room temperature for several days. If they are frosted, keep in an airtight container in the fridge for 5-7 days. FREEZE baked (unfrosted) cookies for 3 months or longer. Defrost at room temp and add icing before serving.

Ingredients

- 1 box lemon cake mix
- 1/3 cup butter softened
- 1/4 cup shortening
- 1 egg
Frosting
- 5 tbsp butter softened
- 2-2 1/4 cups powdered sugar
- 1 tbsp milk
- 1/2 tsp vanilla extract
- 1/2 tsp almond extract
- lemon juice optional
Instructions

What is the correct amount of butter used in the cookie recipe? Both 1/3 cup & 1/4 cup are listed? I see this question was asked before but I can’t see the answer. Thank you.

hi! I really want to make this recipe, but I’m confused on the ingredients for the cookie part. It says 1/3 cup of softened butter and 1/4 cup of softened butter, plus the shortening. That sounds like an awful lot. Is one of the butters an accident?
My cousin made these in January and I ate more of them than I should have. So glad I found the recipe!
