How to make cookies with funfetti cake mix
This easy cookie recipe requires a handful of ingredients, and is a breeze to make!
PREP. Preheat oven to 350°F.
BATTER. With a hand mixer, beat butter, egg, and cream cheese until fluffy. Add in cake mix and beat until smooth.
Chill in the refrigerator for 30 minutes.
BAKE. Roll into 1-inch balls and place on a greased cookie sheet and slightly press the tops to flatten them a bit. Top with jimmy sprinkles. Bake for 12-13 minutes.
Recipe Tips
Cake mix. A box of cake mix is approximately 15.25 oz. Do NOT mix the cake according to the directions on the box. Use only the cake mix powder along with the ingredients for these cookies.
Room temperature ingredients. Use room temperature eggs as they incorporate the best with the other ingredients. Use this post To Soften Butter Quickly.
Chilling the dough. The dough is fairly sticky and chilling the dough can help them roll easier. The colder dough yields a puffy shape with a soft center.
Easy cleanup. Line your baking sheet with a silicone mat or parchment paper for easy removal and cleanup.
Do not overbake the cookies. Take Cake Mix Funfetti Cookies out and allow them to finish baking while they cool on the pan, then transfer them to a wire rack.
Variations
Sprinkles. I like using rainbow sprinkles jimmies because not only do they give the funfetti look but they are soft to eat. Use pretty much any type of sprinkle, just make a test cookie to make sure the sprinkle holds up under the heat and has a pleasant texture.
Frosting. After shaping the dough balls, flatten the tops a bit so that they bake with a top perfect for frosting. Our classic Sugar Cookie Frosting, Vanilla Buttercream, or Strawberry Frosting would be delicious.
Candy coating. Roll this Funfetti Cookie Recipe in a coating of mini chocolate chips or mini M&M’s before baking.
Storing Info
STORE. Allow the baked Funfetti Cookies with Cake Mix to cool on a cooling rack. Transfer them to an airtight container and store them for 4-5 days.
Add a piece of white bread to help keep the cookies soft.
FREEZE in an airtight container or Ziploc for 4-6 months. Placing a piece of parchment or wax paper between each layer will help keep them from sticking to each other.
FREEZE cookie dough. The Confetti Cake Mix dough can be made, covered, and kept in the fridge for several hours before baking. For longer storage:
- Form the dough into balls and place them on a cookie sheet.
- Freeze for about 2 hours or until the outside has become frozen, then transfer them to a freezer-safe container.
- Safely freeze for 4-6 months.

Can this recipe be made into a bar cookies?
Yes, you could definitely give it a try! We also have a Funfetti Blondies recipe, which is more of less that same thing. It just has frosting too. You could always make the blondies without the frosting, if you prefer that. https://lilluna.com/funfetti-blondies/
This was good as per the recipe. I also tried it with a fudge cake mix. That was even better, like a gooey brownie cookie.
Funfetti cake mix cookies were the first cake mix cookies id ever made years ago, but that recipe didn’t have cream cheese. I have to say that addition is a wonderful idea. I also love that you add extra jimmies on top.
These are so fun & colorful!! We love making them for bday celebrations, because of all the sprinkles, they are always a hit!
Fun and happy cookies all made with a cake box! Your family will enjoy these.
