You guys know I’m all about simple and delicious recipes, right?!
Well, today I’m excited to share one of those recipes, and it’s one my family is currently obsessed with!! 😉 The recipe is Glazed Lemon Poppyseed and White Chocolate Muffins. Sounds amazing, right?! Well, they are!! The best part is that they were made with one of the new Fleischmann’s® Simply Homemade® Muffin & Bread Mixes. Fleischmann’s sent me a few boxes to try out, and I knew right away that the lemon poppyseed mix would be the one we would try first. The reason? I LOVE any sort of bread or muffin with poppyseeds!! 😉

We decided to change things up and added some white chocolate chips and a lemon zest glaze that goes on top. The muffins turned out so yummy!! In fact, my husband asked why I hadn’t made them before. I told them it was from a new mix that just came out, and he insisted we try the raspberry and banana mixes right away. 😉 We both agreed that the muffins tasted like they came straight from the bakery, and the kids agreed that they were delicious!
The new Simply Homemade Muffin & Bread Mixes recommend using 2/3 cup Greek Yogurt. Let me just say that greek yogurt is the PERFECT ingredient for these muffins. It adds protein and makes them taste so flavorful and moist.
If you’d like to try this recipe, here is what you’ll need:
Fleischmann’s Simply Homemade Lemon Poppyseed Muffin & Bread Mix
2/3 cup Greek Yogurt
1/2 cup oil
1/4 cup water
3/4 cup white chocolate chips
Glaze Ingredients: 1 cup powdered sugar (sifted), 1 – 2 teaspoons lemon juice, 1 teaspoon lemon zest, 3-5 tablespoons Milk
- Preheat your oven to 375 degrees. Line 12 standard-size muffin cups with paper, or spray with cooking spray.
- In a large bowl, combine the baking mix, yogurt, eggs, oil, and water stirring until it forms a batter. Fold in the white chocolate chips.
- Spoon the batter evenly into the muffin cups, filling each about two-thirds full.
- Bake for 15-20 minutes in the preheated oven, or until a toothpick comes out clean.
- While muffins are baking, make glaze by mixing powdered sugar, lemon juice, lemon zest and milk in a small bowl. Mix well.
- While muffins are still warm dip tops into glaze and let cool on a rack or wax paper. Let set and ENJOY!
This recipe is so simple even the kids can get involved!
Begin by pouring the mix into a medium bowl.
Add your greek yogurt, eggs, oil and water.
Stir until a batter forms and then fold in your white chocolate chips.
Pour into muffin liners until 2/3 full and bake.
While muffins are still warm, dip the tops into the glaze and let set. 😉
