Hi, it’s me, Lily – AGAIN!!!! Yesterday I went to my school Trunk or Treat! How fun is that?! It was TONS of fun and I saw my classmates. I just love to dress up!! I told you last week that I was a pirate.
Since Halloween is almost here I wanted to share one last Halloween treat. Today’s recipe is for Halloween Cookie Cake (kinda like the one we did for the Fourth of July!). This is a GOOD one for Halloween parties. We made this awhile back and we added our favorite candies like Hershey’s Cookies N Cream, Halloween M&Ms and sprinkles!!
You can add whatever candy you like and use whatever color of frosting. I would just make sure the colors are related to Halloween. 😉 If you want to make an easy treat that is a GIANT Sugar Cookie and perfect for your party – try this one!
Making a Halloween Cookie Cake
PREP. Begin by preheating oven to temperature on cookie roll. Line a large jelly roll pan with parchment paper.
PRESS + BAKE. Take out cookie dough from package and press together. Roll out until it’s a circle that is about ¼ inch thick. Cook 14-16 minutes or until golden brown. Let cookie cool.
FROST. Make frosting by beating ½ cup butter and 4 oz. cream cheese until mixed well. Add powdered sugar, milk, vanilla and food coloring. Add to cookies.
DECORATE. Top with cut up candy and sprinkles. ENJOY!
Tips + Variations
For easy removal and clean up line the baking pan with parchment paper
To keep the cookie from expanding too much, chill the dough before baking.
Use store bought frosting and color it your favorite Halloween color to save time.
To make this a soft and chewy cookie cake consider using a smaller pan and slightly under baking your cookie to get that soft texture.
To serve, slice this like you would slice a pizza or you can cut it into squares. You can eat it as is, or you can serve it with a fork.
For a thicker your frosting, add more powdered sugar, if you want to thin the frosting you can add in splashes of milk until it’s the right texture.
As mentioned you can add any candy toppings that you like, particularly ones that are Halloween-ish. Besides the candy you can change treat up others way. Here are a few more options but you can be as creative as you want:
- Make bright purple or orange frosting instead of green
- A fun addition would be to use a white frosting to pipe on a spider web
- Add pretzels for a salty crunch
Storing INfo
To STORE, cover any leftovers tightly and store in the fridge. It will last up to 3 days.
This cookie cake can be FROZEN depending on what you decide to put on it. The frosting and most candies can be frozen. Place the cookie cake in the freezer for a couple of hours until it is solid. Once it’s frozen wrap the cookie cake with plastic and again with aluminum foil. Label and freeze for up to 3 months. Remove the wrapping before thawing. Keep in mind that chocolate can sometimes take on a chalky looking texture when frozen, but it can still be eaten.
