Monster Eye Sugar Cookies

Monster Eye Sugar Cookies - perfect for Halloween or a Monster party! A soft sugar cookie frosted with a powdered sugar and almond extract frosting and topped with candy eyes!

I’m always looking for cute and fun desserts.

Well, last week I was at Wal-Mart and saw these candy eyes in the baking section. I knew I had to use them for something.

Then, I realized they would be super adorable with my Soft Sugar Cookies Recipe!! PERFECT!!

That’s exactly what I decided to do.

Cute and easy right? These candy eyes are bigger than the ones I’ve seen in the baking section (or the Wilton section at Wal-Mart) but they were inexpensive and the perfect touch for these fun cookies. I like them especially because they look like you put a lot more work into them than you actually did, lol!! I LOVE desserts like that.

Here’s the recipe:

Monster Eye Sugar Cookies

Prep Time 10 minutes
Cook Time 8 minutes
Total Time 18 minutes
Servings 2 dozen

Ingredients

Cookie

  • 3/4 cup butter softened
  • 8 oz cream cheese softened
  • 1 cup sugar
  • 1/2 cup powdered sugar
  • 1 egg
  • 1 tsp almond extract
  • 2 3/4 cup flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt

Frosting

  • 1/3 cup butter softened
  • 4 1/2 cups powdered sugar
  • 1/4 cup milk
  • 1/2 tsp vanilla
  • 1/2 tsp almond extract
  • Food coloring (I used the neon green gel - worked perfect!!)

Instructions

  1. Preheat oven o 375.

  2. Cream butter, cream cheese and sugars in large bowl (or Kitchen-Aid) until fluffy.
  3. In a medium bowl, combine flour, baking powder and salt.
  4. Add dry ingredients to creamed mixture. Stir until soft dough forms
  5. Roll out and cut with cookie cutter. Thin dough will make crunchy cookies. If you want soft dough, it needs to be about ⅜ in. {NOTE: Try not to handle the dough too much}
  6. Bake 8-10 minutes on greased pan. Let Cool.

Frosting

  1. Mix ingredients with hand mixer. If too thick, add a tid more milk.

  2. {NOTE: 1 batch of frosting is enough for 2 batches of cookie dough}
