Bite-sized pumpkin spice rolls

Today’s recipe was inspired by the Cinnamon Roll Bites we made a long time ago, but this time they have pumpkin flavor and are made with Pillsbury Grands Cinnamon Rolls. They were delicious and have a yummy homemade glaze on top.

Cinnamon rolls are already delicious on their own—the only thing that could make them better is pumpkin spice! The Pillsbury Grands that we used for this recipe were special limited edition Pumpkin Spice Rolls, and they were SO yummy!

They already have pumpkin spice mixed in with the dough, and then after you cut them into bite-sized pieces, you roll them in even MORE pumpkin spice and sugar.

By the time they’re baked and covered in a homemade glaze, these Pumpkin Cinnamon Roll Bites are PACKED with yummy flavor!

Tips for making them

Can’t find Pillsbury Pumpkin Spice Rolls? You could definitely use original Pillsbury Grands or Cinnamon Rolls! The pumpkin spice and sugar mixture that you roll the refrigerated dough in will add just enough pumpkin flavor, although it won’t be quite as strong.

Other topping ideas. It’s always fun to make little additions here and there to change a dish. You could try adding any of these toppings before baking:

  • Chopped pecans or walnuts 
  • Raisins
  • Cinnamon
  • White chocolate or mini chocolate chips
  • Caramel Drizzle (after it’s baked)

Make ahead of time. You can assemble all the ingredients, cover with plastic wrap and store it in the fridge overnight. The dough may not be quite as fluffy as it is fresh out of the tube, but it’s still quite delicious.

To make the homemade glaze

The glaze only requires a small handful of common ingredients:

  • powdered sugar
  • butter
  • vanilla
  • milk
  • cinnamon

All you have to do is mix the ingredients together until they are well combined, and then pour over the warm cinnamon roll bites. Drizzling the glaze on while they’re hot helps it melt into the ooey gooey consistency that makes these so irresistible!

Pumpkin Cinnamon Roll Bites Recipe

Bite-sized pumpkin flavored cinnamon rolls, covered in a pumpkin spice and sugar mixture, baked to perfection, and topped with a dreamy cinnamon glaze! These Pumpkin Cinnamon Roll bites have become our new favorite quick and easy pumpkin dessert!

Ingredients 

  • 17.5 oz can Pillsbury Grands Pumpkin Spice Rolls
  • 3 TB butter melted
  • 1/3 c sugar
  • 1 TB pumpkin spice

Glaze

Instructions 

  • Preheat oven to 350. Grease an 8×8 pan with cooking spray, and set aside.
  • Place pumpkin spice and sugar in a small bowl and mix well. Set aside.
  • Cut biscuits into quarters and dip in sugar/spice mixture until coated.
  • Place in pan close together and spread melted butter over cut biscuits.
  • Bake for 20-22 minutes.
  • Mix glaze ingredients until well combined and pour over warm biscuits.
