Healthy Breakfast in Minutes!

A healthy breakfast is not always easy when you’re running around in the morning trying to get kids ready for school and out the door.

No excuses because we want to be healthier and not skip out on the best meal of the day.

To help out, the hubby and I have created what we think is the Best Green Smoothie Recipe that is yummy, healthy and takes just a minute to make.

We fill it with all the fruits and vegetables we love, making it delicious and the perfect breakfast, especially for crazy days.

When it comes to smoothies, we usually buy ingredients in bulk and spend time cutting everything up and packaging them in quart size freezer bags to freeze. That way we can pull it out, add a few more ingredients in the blender, and we’re good to go in a matter of minutes. 🙂

BLEND. Add all ingredients (almond milk, spinach, avocado, vanilla yogurt, pineapple chunks, chia seeds and sweetener) to your blender and mix until well combined.

*Note: If items were not frozen beforehand, add ½ cup ice to make it cold.

This makes about 2 -3 cups. For more add ½ cup strawberries, ½ cup spinach and ½ cup more milk or water.

Variations: That’s the beauty of smoothies – you can add or take out anything you like. Here are a few things that we think would be great additions to this recipe:

  • berries – strawberries, blueberries, raspberries, blackberries
  • fruits – mango, banana, etc.
  • protein powder
  • almond milk or coconut milk
  • yogurt (plain, vanilla or flavored) or Greek Yogurt

FAQ

How to make ahead of time? Make one smoothie or multiple smoothies ahead of time by prepping the ingredients.

Wash, slice, and divide the fruit into individual sized portions and keep them in Ziploc bags in the freezer. The yogurt can be frozen in an ice cube tray. The ice and juice are best added to the smoothie right before mixing.

With the ingredients prepped like this, you can take the ingredients straight from the freezer to the blender!

How to store? Just add a little bit of lemon juice or Sure Fresh so the smoothie doesn’t brown. If there’s a little room at the top of the container, cut a piece of plastic wrap and place it directly onto the top of the smoothie. 

Store in the fridge for 12 hours or in the freezer for up to 3 months.

Ingredients 

  • 2 1/2 cups almond milk
  • 2 cups spinach
  • 1/4 avocado
  • 1/4 cup vanilla yogurt
  • 1 cup pineapple chunks, frozen
  • 1 tbsp chia seeds
  • 1-2 tsp sweetener (optional)

Instructions

    I made this on my lunch break, since I had everything but chia seeds. I did need some sweetener but only little honey not much. Actually was really good and gets my greens in for the day!

    Yum!! This is a great go to when starting my day! Sometimes I don’t have almond milk so water is great! And then I’ll add some collagen protein powder just for more benefits! And if I have a cucumber or celery getting a little wimpy I’ll throw it in as well! Love the avocado for a healthy fat for my brain! Keep this in your go to!! For energy and lasting qualities.

    What do you usually use for liquid and how much? Smoothies have become my new go to breakfast, can’t wait to try. I have been making them with oatmeal and PB2 they are super filling.

    I love smoothies!! It’s become my new favorite summer breakfast especially since it’s too hot here in Houston….as you well know 🙂 lol!! I’m going to try the freezing ahead of time like you suggested. I hadn’t thought about it, but it would sure make my life simplier. I usually put a handful of spinach, frozen strawberries, fresh banana, greek vanilla yogart and 1 pack of Truvia and blend. I’ve also made it with frozen raspberries and both were delicious!! Thanks for the recipe. I will be trying it!!

    I would recommend using greek yogurt and putting vanilla in it if the yogurt isn’t vanilla. Also, you could put a spoonful of cocoa powder and see how that tastes too! The recipe sounds good! I’m gonna try it 🙂

    My favorite green smoothie recipe is 1 cup Spinach, 4-6 oz sugar-free plain or vanilla yogurt, 1 Tbsp creamy peanut butter, 8 oz skim milk, 1 banana, 1 scoop chocolate protein powder., several ice cubes. I often have it for dinner!
