An easy appetizer!

I love an appetizer that whips up in minutes. They are great to have on hand for a quick snack for unexpected company – especially during the holidays.

These Pesto Tortellini Skewers are a perfect appetizer for such occasions!

They literally whip up in minutes, look phenomenal, and taste even better! Tortellini Skewers are made using your favorite tortellini, so get creative.

Tortellini on skewers look great on a platter, and while they are insanely simple, you are sure to impress!

10 Minute Appetizer

PASTA. Add water and salt to a large pot and bring to a boil.

Add tortellini and cook for about 5-6 minutes, or until tortellini float to the top. Drain and rinse tortellini.

SAUCE. Add tortellini, cherry tomatoes, and mozzarella balls to a large bowl. Add pesto and drizzle with olive oil. Toss to coat.

SKEWER. Add a tortellini, tomato, and mozzarella ball to the skewer and repeat one more time to have 6 pieces on each skewer.

ENJOY! Refrigerate until ready to serve.

Tortellini Tips

What type of tortellini to use. You can find premade tortellini, or a slightly larger version of tortelloni, in the freezer or refrigerator section at the grocery store.

You can find them made with plain pasta or colored pasta. They are also filled with different ingredients, such as three cheese tortellini, meat tortellini, or spinach ones.

Variations

Easily change up this recipe to create different variations. Some delicious ideas that you try include:   

  • whole olives
  • roasted red peppersย 
  • artichokes
  • julienne cut sun-dried tomatoes, drainedย 
  • thin sliced prosciutto, salami, or pepperoniย 
  • fresh basil leaves
  • chopped grilled chicken
  • drizzle with Italian dressing or balsamic vinegar

Storing Info

Make ahead of time. Make these a few hours in advance, but not too much longer as the pasta tends to absorb the dressing and dry out. Keep them covered in the fridge for 4-6 hours before serving. 

STORE. Leftover Tortellini Appetizers can be covered and stored for 1-2 days in the fridge.

Ingredients 

  • 1 teaspoon salt
  • 1 20 ounce package refrigerated tri-color tortellini or any type refrigerated tortellini
  • 2 pints cherry tomatoes
  • 1 8 ounce package fresh mozzarella balls
  • ยฝ cup pesto
  • 2 tablespoons olive oil
  • Bamboo skewers

Instructions 

  • Add water and salt to a large pot and bring to a boil.
  • Add tortellini and cook for about 5-6 minutes, or until tortellini float to the top. Drain and rinse tortellini.
  • Add tortellini, cherry tomatoes and mozzarella balls to a large bowl. Add pesto and olive oil and toss to coat.
