Let’s be honest… is there anyone who doesn’t love Mexican food?
It’s one of those magical cuisines that works for everything… family dinners, casual get-togethers, celebrations, and full-on fiestas. It’s flavorful, customizable, and (best of all) easy to prep ahead so you’re not stuck in the kitchen while everyone else is having fun.
Today I’m walking you through exactly how to host a Mexican Fiesta with simple, fail-proof recipes and a plan that actually works.
🌮 The Secret to an Easy Fiesta
- Pick ONE recipe from each category below.
- Prep ahead using the timeline below.
- Let the food do the heavy lifting.

Step 1: Choose Your Menu
This is the easiest part. Go through the list below and pick 1 from each section. Continue on to the schedule below to see when to make it.
There will be recipes for:
- Salsa Appetizers
- Side Dish
- Fried Favorites
- Main Dish
- Dessert
SALSA APPETIZER > PICK 1
Every great Mexican meal starts with a good salsa. It’s the easiest way to add fresh flavor, color, and a little kick to your table (without a lot of extra work).
Pick one that fits your crowd (mild, spicy, etc), and serve with your favorite Tortilla Chips. Our current favorites are Juantonio’s (or Juanita’s) and Josefina’s.

3 Copycat Chili’s Salsa
SIDE DISH > PICK 1
Sides help round out the meal and make it feel complete, but they don’t need to be complicated. Choose one that pairs well with your main dish… something warm, flavorful, and easy.

5 Cilantro Lime Rice Recipe

FRIED FAVORITES > PICK 1
If you want to add something extra fun (and always a hit), this is the section. Fried favorites bring that irresistible crispy texture that everyone loves and instantly make things feel more festive. The key here is to keep it simple! Choose one option where the meat and fillings can be prepped ahead and then these can be fried quickly before serving so you get that warm, fresh-from-the-kitchen bite without the stress.

8 Chicken Tacos Recipe
9 Beef Flautas
MAIN DISH > PICK 1
This is the star of your fiesta, but that doesn’t mean it has to be stressful. Go with something simple, reliable, and one that can be made ahead of time. Each of these can be made ahead of time and baked right before dinner.
10 Green Chili Chicken Enchiladas
11 Cheese Enchiladas Recipe
12 Chicken Enchilada Casserole Recipe
DESSERTS > PICK 1
Finish things off with something sweet that feels a little special but doesn’t require last-minute work. Many Mexican desserts are perfect for making ahead (all of these options are great made a day ahead), which means all you have to do is slice, serve, and enjoy. Pick one crowd favorite and you’re set.

TO-DO LIST
Now that you have your recipes, all you have to do is get your ingredients and plan your cooking schedule.
This is what we like to do when we are preparing to host a Mexican fiesta.
DAY BEFORE
- Cook and shred the meat for your main dish and appetizer. Store them in the fridge.
- Make your dessert the day before as well.
MORNING OF
- Prepare the main dish and refrigerate.
- Make salsa and refrigerate.
A COUPLE HOURS BEFORE
- If making Crockpot Spanish Rice, get this started.
- Set the table and prepare your drink. We keep things simple and do water or a powder lemonade.
1 HOUR BEFORE
- Turn your oven on.
- Prep your pans if you are going to be frying anything. Also, take out meat from fridge for your fried favorite as well as get a paper-towel lined plate ready.
- Get chips and salsa out and ready.
- Start prepping the rice to make about 40-45 minutes before dinner is scheduled.
30 MINUTES BEFORE
- Place enchiladas or enchilada casserole in the oven.
- Turn on oil for fried favorites and start frying.
- Have a spouse or child help you put all the food out right before.
Make it Even Easier
If this sounds like a lot for you, don’t stress it. You can use some of the recipes above, cut out a few of them and still host a Mexican Fiesta even even easier. Here are a few tips that can help:
- Ask guests to bring one of the dishes. Dessert is usually an easy one.
- Buy your salsa. Homemade is better, but store options are fantastic too.
- Keep dessert simple. Buy ice cream or our favorite: Helados Mexico.
With just a few easy recipes and a little planning, you can create a meal that feels festive, generous, and not stressful.
And honestly? When there’s chips, salsa, and tres leches on the table… you’ve already won.
