Simple Greek Cucumber Cups are a light and delicious appetizer that whips up in minutes. They are a perfect low calorie snack!

Healthy, Simple Appetizer

I had seen cucumbers used as cups filled with different ingredients and thought I’d try making some Greek Cucumber Cups. They ended up being a hit and are the perfect appetizer or side for any function.

I filled mine with cherry tomatoes, chicken, olives, feta cheese, and Greek dressing and it was the perfect amount to give it a ton of flavor but still have it be healthy as well. I know there are endless combinations of food you can put in these cups, but this Greek version was so tasty and so simple!!

Greek Cucumber Cups

FILLING. In a bowl, mic cherry tomatoes, chopped chicken, olives, feta cheese, greek dressing, salt and pepper.

CUCUMBERS. Peel cucumbers partially, leaving think stripes of skin going down the entire length of the cucumber. Trim the ends of the cucumbers and cut each cucumber into 1 – 1½ inch thick slices. Scoop out the center of each slice with a melon baller or spoon, leaving a shell of flesh.

COMBINE + SERVE. Scoop about 1 tablespoon of the chicken mixture into the cucumber cups. Garnish with additional cilantro and feta, if desired. ENJOY!

Tips, Variations + Storing Info

Cucumbers: An easy way to form the cucumber cup is to use a melon baller to scoop out the center. Also, I like the look of the segments of peel that I left on, but you can choose to peel the entire cucumber.

Chicken: use a chopped/shredded rotisserie chicken instead of cooking and chopping your own chicken breasts.

Other great filling: These cucumber cups can be used as a base for so many other delicious fillings such as:

STORE leftover cups in an airtight container. They can last for 2-3 days in the fridge. Do not freeze.

To make ahead: Slice and scoop your cucumbers into cups ahead of time. You could also assemble your filling ahead of time. Store them in separate containers in the fridge for up to 2 days.

Ingredients 

  • 2 cucumbers
  • 1/2 cup cherry tomatoes chopped
  • 1 cup chicken chopped, cooked
  • olives
  • 1/3 cup feta cheese
  • salt
  • pepper
  • cilantro chopped

    Great idea using the cucumbers as a serving dish. I use lettuce a lot for wraps but sometimes I just don’t feel lettuce has enough “substance” to it — I feel like this solves that problem!
