This simple caramel turtle recipe has a baked pecan base smothered in chocolate and homemade caramel – a perfect treat for sharing!

A Favorite Flavor Combo

Caramel-covered turtle candy is a family favorite (our mom’s all-time favorite)! And how could it not be with chocolate, pecans and caramel all over?!

This turtle-shaped candy is often sold and made year-round but is especially popular during Thanksgiving and Christmas. We always include them on our treat plates for holiday gifting and love to add them to party plates and Charcuterie boards for family gatherings since we love them so much.

Our turtle recipe includes homemade caramel for melt-in-your-mouth perfection! If you love the flavor combo of turtles, you also need to try Turtle Thumbprint Cookies and Turtle Cheesecake.

WHY WE LOVE IT:

  • Flavor combination. The combination of crunchy pecans, chewy caramel, and chocolate is incredible.
  • Homemade. This version is better than any turtle candy we have ever purchased. Plus, they’re less expensive to make than buy.
  • Simple steps. Don’t be intimidated about the candy-making process, the steps are simple and there are plenty of tips!

Ingredients

  • 3 cups pecan halves
  • ½ cup butter – if using salted butter reduce the amount of added salt
  • 1 cup brown sugar
  • ½ cup corn syrup – light corn syrup
  • dash salt
  • 7 ounces sweetened condensed milk – (half of a 14-ounce can) Do not use evaporated milk.
  • ½ teaspoon vanilla extract
  • 1½ cups chocolate chips – milk chocolate chips, or try semi-sweet, dark chocolate chips, or white chocolate chips
  • ½ teaspoon vegetable oil – or shortening
  • optional topping – sprinkle with flaky sea salt

Use Store-Bought Caramel

Use 25-30 soft store-bought Kraft caramels or a bag of caramel bits. Melt them in the microwave in 30-second intervals, stirring in between.

If the caramels are a bit tough, add a little spoonful of half and half to yield a smoother result.

How to Make Our Turtle recipe

  1. PECANS. Place 3 cups pecan halves in a single layer on a baking sheet. Bake at 350°F for about 10 minutes or till lightly browned and fragrant. Let cool. Arrange in clusters of 3-4 on silicone liners or parchment paper (not wax paper).
  2. CARAMEL. Combine ½ cup butter, 1 cup brown sugar, ½ cup corn syrup, and a dash of salt in a 6-quart pot. Bring to a boil over medium heat. Add 7 ounces sweetened condensed milk and ½ teaspoon vanilla.
  3. CORRECT TEMP. Continue cooking and stirring. Use a candy thermometer to ensure the caramel reaches 235-240°F.
    • I use the ice water test, it’s more accurate. Drop a small spoonful of the hot caramel into a bowl of ice water. When you take it out, you should be able to roll it into a ball. Then it’s done.
  4. ASSEMBLE. Quickly spoon the caramel over the pecan clusters, making sure the caramel is touching each of the pecans. Let sit to harden.
  5. CHOCOLATE. Melt 1½ cups chocolate chips and ½ teaspoon oil in the microwave at half power, stirring often till smooth. Spoon chocolate on top of each layer of caramel (sprinkle with salt if desired). Let sit for 1-2 hours, or till hardened.

PRO TIP: High Elevation

In general, subtract 2° from the stated temperature for every 1,000 feet above sea level. For example, if you are 4,000 feet above sea level, subtract 8° from the stated recipe making it 227-232°F.

Turtle Recipe

Ingredients 

  • 3 cups pecan halves

    These have become a friends and family favorite! I made about 500 of them last Christmas!!! A little burned out to say the least. Absolutely delicious. My only correction would be that half of the sweetened condensed milk is not 7 ounces. Measure the whole can out and use half. You will be not be disappointed making these…also, I sprinkle with sea salt at the end when they’re done.

    These don’t look like turtles. You should pour chocolate on sheet put pecans pointing out like feet. Then caramel then chocolate over all. The shape then appears to be a turtle, hence the name. Yours are simply candy not turtles.

      It’s pretty typical for the pecans to be layered on the bottom with the caramel and chocolate taking on the “shell” of the turtle on top. Thanks for the suggestion though… that would be fun to try that way as well!

      I think you should make them they way you want. I’ve been eating turtles for over 50 years and I’ve never had them in the shape of a turtle. They qere perfectly fine made as instructed, and EVERYONE knew exactly what they were.

    Love your site! I tried these for the first time and the caramel was still a little too soft even the next day. I used a candy thermometer and let the mixture get to about the 240ish mark. I think next time I will try a little less corn syrup. I also found that I had to wait about 10 minutes for the caramel to cool and thicken enough to spoon over the nuts. I followed Natasha’s recommendation and added a little sea salt on top. Yum!

    These turned out, but I do not recommend using parchment paper. When I went to pull the turtles off they stuck to the paper. I can’t believe no one else commented on this. I need to invest in silicone liners or next time I will assemble them right on the baking sheet or counter. I will make again. Thank you!

    This was very good and very easy! I just never know if caramel will turn out for me. This was ready quickly, didnt harden too quickly to work with.     The first time I made these they came out perfect! 2nd time the caramel wasn’t hard enough even though I could make a ball from the water bath. I just made them again for Christmas and I’m not sure that they will be hard enough again. Can you tell me approximately how long you need to stir it once it comes to a boil? There has to be a more sure proof way of knowing. Keeping my fingers crossed now that they will harden enough to give out as gifts!

      I like to use a candy thermometer to ensure it gets to the right temperature. Then I know it’s sure to set up but not be too hard. Target temp for the caramel is 235-240 degrees. So the actual amount of time stirring could depend on how quickly your stovetop heats… I hope that the caramel hardened for your gifts and that they were a hit! 🙂

    I made these today–I would say the recipe was easy to follow and they taste wonderful!
    My question is that they are so gooey. So to store them I have turned them upside down–chocolate side down, pecans up. Otherwise they are sticking to the containers. What can I do to give these as gifts when they are so sticky? Shall I add a piece of parchment paper to the bases?

    Way too long for the pecans. They burned within 4 minutes. Caramel was at the right temp and balled in ice but still turned out too sticky/didn’t form enough to pick up without becoming a mess (tasty though).

    These turtles are fantastic! Every Christmas I make turtles for a friend who loves them. She said these were the best she had ever eaten! So did two of my other recipients!! I agree! After reading a couple of reviews regarding the caramel not setting up enough I cooked mine to 240-245 degrees. That was perfect. I also weighed the sweetened condensed milk to be sure I was actually using the required 7 ounces. Thank you so much for this recipe! It will be the only one I use from now on!

    This is an excellent recipe and relatively easy to make. Had a small Christmas dinner and everyone raved about them! I am now making two batches and with that said, I discovered that the contents of a 14 oz. sweetened condensed milk is actually 10 oz. of the milk! So if you’re following this recipe as is, it’s actually 5 oz. of SCM. I also added a just a little sea salt to the top of one group. So yummy!

    Easy to make! First time making caramel and it turned out great! my caramel was too hot the first minute or so and it really ran everywhere. so I went back after it had cooled down and thickened up and put more caremel on top of the pecans. Worked great! the only problem I had was with the chocolate. after 4 hours the chocolate still hadn’t set. I’ve put them in the fridge and hope that works. Any suggestions? i want to be able to layer them in my container and definitely can’t.

      I am glad you tried these! It does take a while for the chocolate to set. Did the fridge help? I was going to say, I like sticking them in there to set faster! I hope they did.

    Thanks for the recipe. flavor is excellent but my caramel was too hard. I think high altitude might cause this to cook differently. was very glad i used the ice water test but should have finished cooking at a fairly soft ball stage. made a 9 degree adjustment for my 4500 ft elev, but the candy was already at hard ball stage at under 215 degrees. (i tested my candy thermometer ahead of time to make sure it was accurate.) the candy didn’t boil up the sides of the pot, either, so maybe elevation affects that as well. I’d try the recipe again using a smaller pot and reduce the cooking time/temperature, cooking to soft ball stage only.

    I just made these twice for my husband for valentines day. The first time the caramel ran all over the place so they all stuck together, I am going to call them alligators Lol. But being me I refuse to be out done, the second time I was for sure they were perfect but as they set they were so hard that one actually shattered into pieces that I accidentally drop on the countertop. Help me. This is his favorite candy and I would love to perfect it. I broke the first ones apart and put chocolate on them. He just walked in. Hope he likes them

        Just fyi, they turned out great with the dark corn SYRUP. The color was slightly darker but the taste and texture was spot on! I took them to a small new years eve party.. all 3 dozen were gone long before midnight. I had a little extra caramel so I put it in a dish, let it set up, cut it into squares and dipped it in chocolate for the people who were not a fan of nuts. They held there shape like a dream. These will be a new holiday tradition at my house. Thanks!

    Mine are currently setting up and look amazing. I don’t have a candy thermometer and I’ve never been good at the ice water method, so I made an educated guess and took the caramel off The STove when I thought it should be done. Its setting up so I think I guessed right.

    This recipe made a lot! I got just over 4 dozen. I also did some with PECANs and some with cashews instead of pecans.

    I lightly sprinkled coarse salt on top of the chocolate for salted caramel chocolate clusters.

    I have made these twice and both times the caramel has been rather soft. When you pick them up it starts slowly drooping down. I put them in a container in the fridge and as long as they were cold you get them out fairly easily. But as soon as they started getting to room temp, they stuck to each other and you had fight to get them out and the pecans broke. Any suggestions? They taste good but want to make these to put in christmas boxes for friends.

      Mine get a little soft, but not too soft. I wish I knew how to make them a little harder. I haven’t honestly had an issue with them drooping.

        The homemade caramel never set, it was still soft. So I boiled the left over Caramel again to 240-250 deg, and I’ll see what happens… The Caramel is delicious. I put the ones I made in frig, and i will ‘ make Chocolate and hopefully they will be perfect.

    The recipe for turtles never adds the Carmel to the corn syrup, brown sugar, etc…….

    So I added Carmel chips anyway with the rest of the ingredients and it is almost to soft and so so so sugary you almost collapse from sugar. They are horrible unless i just can’t cook. But seeing how you screwed the recipe…….. and wasted my money. Send me a reimbursement of $30 please ! ! !

      I melt chocolate pieces & put small rounds on paper, then I add pecans, then caramel sauce then another dollup of chocolate & put in freezer about 20 minutes. I get chocolate melts at craft store. This way there is a chocolate base for pecans & caramel sauce.
