Everyone loves a good slow cooker recipe, and this crock pot mac and cheese is so simple, cheesy, and delicious!

Ingredients

  • 2 cups uncooked elbow macaroni – Elbow macaroni noodles are a mac and cheese classic, but you can use other similarly sized noodles like shells, cavatappi, penne, farfalle, fusilli, or rotini.
  • 4 tablespoons butter – salted or unsalted butter both work for this recipe
  • 2½ cups grated cheddar cheese – use any cheese that melts well, or add a flavor twist with manchego, muenster, provolone, Monterey jack, fontina, gruyere, or American cheese. Even Velveeta cheese works.
  • ½ cup sour cream – or plain Greek yogurt
  • 1 (10.75-ounce) can condensed cheddar cheese soup – or cream of chicken soup
  • ½ teaspoon salt
  • 1 cup whole milk – whole milk makes the creamiest sauce but a lower fat milk can be used.
  • black pepper, to taste – for added flavor, use garlic salt with parsley flakes

How to Make Crock Pot Mac and Cheese

  1. PASTA. Bring water to a boil and cook 2 cups of macaroni for only 6 minutes. Drain and set aside.
  2. SAUCE. In a medium pan, mix 4 tablespoons butter and 2½ cups shredded cheese until cheese melts. Add ½ cup sour cream, 1 can condensed cheddar cheese soup, ½ teaspoon salt, 1 cup whole milk, and season with black pepper. Stir until combined. 
  3. SLOW COOK. Spray the crock pot with nonstick cooking spray. Add the cheese sauce to the slow cooker and the cooked macaroni. Mix until combined and cook on low for 2 hours stirring every once in a while.

Use at least a 6-quart crockpot for this recipe. To double this recipe, which we do all the time, we have been able to have everything fit in out 8-quart slow cooker.

Crock Pot Mac and Cheese

Ingredients 

  • 2 cups uncooked elbow macaroni
  • 4 tablespoon butter
  • cups grated cheddar cheese
  • ½ cup sour cream
  • 1 (10.75-ounce) can condensed cheddar cheese soup
  • ½ teaspoon salt
  • 1 cup whole milk
  • pepper

Instructions 

  • Bring water to a boil and cook macaroni for 6 minutes. Drain and set aside.
  • In a medium pan, mix butter and cheese until cheese melts. Add sour cream, soup, salt, milk, and pepper until combined.
  • Add this mixture to the slow cooker along with the cooked macaroni. Mix until combined and cook on low for 2 hours stirring every once in awhile.

Notes

STORE. Store leftover slow cooker Mac and Cheese in an airtight container in the refrigerator for 3-5 days.
The key is to reheat slowly on low heat. Adding in a bit more milk can help smooth out the texture. You can reheat in the slow cooker, covered in the oven, stovetop, or microwave.
Note: Discard Crockpot Pot Mac and Cheese if left out for more than 2 hours at room temperature.
FREEZE. This pasta dish can be frozen for 2-3 months. When you’re ready to use, thaw it in the fridge and reheat slowly over low heat.

How to Thicken the Sauce?

> Remove the lid of the crock pot to allow for some liquid to evaporate
> Add in more cheese
> Cornstarch slurry. in a separate bowl, combine 1 tablespoon of COLD water with 1 tablespoon of cornstarch. Stir it into the Mac and Cheese and the dish will thicken as it continues to cook.

Best Additions for this recipe?

When there are about 30 minutes left in the cooking time, add in some of these suggestions:
– cooked bacon bits, diced cooked ham, grilled chicken, or cooked hamburger
– parmesan cheese
– broccoli or roasted red peppers
– garlic powder, dry mustard, onion powder, red pepper flakes, or paprika

How to Store Leftover Crock Pot Mac and Cheese?

      I have Cream Soup Substitute recipe that you could try. Instead of using all purpose flour the make the roux, you can replace it with a Gluten-free baking flour, or a blend of rice flour and tapioca.       You can definitely reduce the salt next time. Sometimes adding a splash of something acidic can help…. a squirt of lemon juice or even a tomato product like ketchup or salsa can help it not seem to salty.

    HELLO !! I made the mac-n-cheese for Thanksgiving dinner. It was my side for the kids. Well, the adults loved loved loved it ALSO. Amazing thing is I haven’t made mac-n-cheese for 30 years & that came from a box 🙂 I didn’t have a very good grater so that took me longer ! I used the small elbow noodles from Trader Joe’s.     Did a huge batch (x10 the recipe) for a graduation party of 100 people. Cooked it in a large roasting pan and it was a hit! I cut the salt in half since condensed soup mix is ultra salty and I’m glad I did….it probably could’ve gone without any salt added at all. This is much easy and holds up better with a better texture than making a traditional cheese base using a roux. Melting the cheese slowly is key to a smooth texture and slowly add milk to not chill the cheese sauce down too much. Look forward to making again in a normal batch size. That was a lot of cheese to shred!

      You could do a different condensed soup… like cream of chicken. It would alter the flavor of the Mac and cheese alittle but should still taste yummy. You’ll have to let us know how you like it if you try it with a substitute soup.

    So I’ve made this many times. I usually prepare as directed, then dump into a casserole dish and top with butter breadcrumbs, then bake at 350° for 40 minutes or so. It’s perfect! Today, I’ve added shredded chicken and green onions. It smells amazing! I also usually add a pinch of ground mustard and a pinch of nutmeg, it really makes it pop.

    So smooth, creamy & tasty! Another absolutely delicious recipe and the best homemade Mac & Cheese I have tried to date. I followed the recipe as is using sharp cheddar I grated/shredded myself, but also served it with fresh grated/shredded parmesan on top as mentioned in your add ins note. So many scrumptious possibilities for additional add ins, varying cheeses etc. and you noted some of my favs, lol, I will have to try some bacon or ham in it next time 😋

    This was awesome!! I needed a quick mac and cheese recipe to take to small gathering yesterday. This literally took less than 5 minutes to throw together after I boiled the noodles. I was skeptical about the can of cream of cheese soup. My go-to recipe for macaroni and cheese is to make a white sauce on the top of the stove and then add the cheese, boil the macaroni mix it together and then bake it in the oven. I’m going to try this recipe again but put it in the oven and bake it with my usual bread crumbs on the top and I think it’s going to be delicious!

    This was a fun base recipe. I tweaked some things. Used smoked gouda, sharp cheddar and mozzarella. I also used half milk half heavy cream (adding a fourth cup more then the recipe because it seems a bit dry when it’s done cooking). And added in some sauteed kielbasa sausage to round out the meal. I also added some dry mustard and a little cayenne too for some heat. It’s a good macaroni and cheese that my kids absolutely love!

      I used a 6-quart crockpot for this recipe. I haven’t doubled the recipe before so I’m not sure if there would be enough room in the crockpot. You should have room if you make 1 1/2 times the recipe though. Hope this helps!

    Made with cream of chicken soup as I never have cheddar cheese soup on hand? I also added a splash of Worcestershire sauce because I love it with cheesy dishes.
    I think the crock pot is totally not needed. One could eat it right away once the noodles (I fully cook them and drain) are mixed with the melted cheese sauce. I placed it in a baking dish, sprinkled seasoned bread crumbs on top, and broiled uncovered for 15 minutes. I have also made this using a 16 oz package of gnocchi instead of the noodles with awesome results! A favorite add-in is a small can of Rotel (drained). A little Bleu cheese adds a delicious twist too!

        I haven’t tried it on high, but you could! You’d just want to keep an eye on it so it doesn’t burn. Essentially, everything in this dish is already cooked, it just needs to warm through together. So you could essentially even make it over the stovetop. After melting the cheese and the cooking the noodles, combine over the stovetop until heated through. If you do it on high, maybe check it after 1 hour and determine if it is ready.

    I don’t normally leave reviews but this was delicious ! Over the last few years I have been trying to find the perfect Mac n cheese crockpot recipe and I finally hit the jackpot ! About halfway through I added a little more cooked pasta b/c it seemed a little to soupy for my taste and it worked out perfect. I also added a small amount of onion , but otherwise followed the recipe. IT WAS SO GOOD ! I was nervous about trying a new recipe on Thanksgiving day but this was the most popular dish.       I like to use sharp or medium cheddar, but really it’s a personal preference 🙂 I haven’t tried using the half evaporated milk. But, if it gives a richer flavor..I’d say it’s worth a try 🙂

    So… I came ACross this recipe like Two MOnths AGo, but I didn’t get to try it until now. Let me TEll you Though… it was a hit!!! This is by far the best recipe I have EVer tried FOr homemade mac! The ingredients are simple, it’s fast and easy To put together, and it tastes amazing!!! THe cheese sauce is very thick and creamy, but NOt Too thick that makes your tounge stick to the Roof Of your mouth. I actually appreciated the FAct there was no flour added to this because other RECIPIes left the sauce tasting a little chalky. The sour cream in this mixed with the cream Of cheese soup really helped to thicken up the sauce in just the right way! I just HAd to hunt down this website so That I Could come back and leave a review! 10/10 recommend This!

    Thought of making this for Thanksgiving so gave it a trial run today. It’s a great recipe! The cheddar soup kind of grossed me out at first, but you can’t really taste it. I think the sourcream is what makes this mac and cheese special.
    The fact that it’s so easy makes it a 5/5 in my book. It a very cheesy saucy mac and cheese that thickens as it sits. The noodle to sauce ratio makes this a decadent treat for sure.
