This is our family’s favorite Easy Lasagna Recipe!

My mom makes Lasagna for the family all the time. We love all lasagna – like Chicken Lasagna and even Lasagna Soup. It’s one of those meals that the entire family loves, and one that feeds a crowd.

Over the years, my mom has tried a TON of Lasagna Recipes, but this is the one that has stuck because we love it that much!

This Lasagna Recipe is SO simple and SO delicious it is a best-loved recipe here on our site – you’re sure to love it!

How to make lasagna

PREP. Preheat oven to 350°F. 

SAUCE. In a large pan over medium heat, sautee garlic in vegetable oil for 2-3 minutes. Stir in basil, salt, a dash of pepper, and tomato sauce. Reduce heat to low and simmer for 10 minutes.

  • In a large skillet over medium heat, brown beef and pork until no longer pink.
  • Add meat to the tomato sauce and simmer for an additional 10 minutes.

CHEESE MIXTURE. In a bowl, combine Parmesan cheese, cottage cheese, and sour cream. Mix well and set aside.

Assembling Lasagna Ingredients

LAYER. In a 9×13 baking dish, spread 1 cup of the sauce on the bottom. Layer with lasagna noodles and spread another cup of sauce on top of the noodles.

  • Add 1 cup of shredded mozzarella cheese and then half of the sour cream mixture. 
  • Add another layer of noodles, followed by a cup of sauce, another cup of shredded mozzarella, and then the rest of the sour cream mixture.
  • Then, add one more layer of noodles and the last of the sauce. 

BAKE. Add Parmesan cheese to the top and bake for 25-35 minutes depending on how crispy you like your edges. Let set up for 5-10 minutes before serving.

Recipe Tips

Lasagna layers. Lasagnas typically have 2-3 complete layers. This recipe has 2 complete layers of lasagna noodles.

Each of the two layers is topped with meat sauce, shredded cheese, and cheese sauce. These deliciously full layers are then topped with a final layer of noodles and sauce. 

No boil noodles. No boil pasta noodles are the same as regular lasagna noodles, except they have been precooked and then dried. They also do not have the signature ribboned edges that regular noodles have.

Since no boil noodles have been precooked, simply layer them into the lasagna and the moisture from the sauces will soften the pasta as it bakes. 

  • Boil regular noodles to use in the lasagna if desired. Boil the noodles to al dente, drain, and then lay each noodle out on a cooling rack to dry out a bit while whipping up the sauces. Layer the lasagna as directed and bake. 

Why is my lasagna soupy? It can sometimes be tricky to determine what makes someone else’s dish not turn out quite right. Some common factors may include:

  • Not draining excess fat from the browned meat.
  • Using non-fat sour cream and cottage cheese which tend to be more watery.
  • Using regular noodles instead of the no boil kind.
  • Higher altitude baking may require a longer baking time than listed in the recipe.

Variations

Meat. This recipe is one of our favorites because it uses ground beef and Italian sausage. If using fattier meat, drain excess oil before adding the browned meat to the red sauce. 

  • Italian sausage options: sweet and spicy, mild, or hot sausage.  
  • If you don’t like sausage, simply use all ground beef. 
  • Use ground turkey or chicken in place of beef and pork
  • Omit the meat for vegetarian lasagna.

Vegetables. Adding vegetables is easy and can add delicious flavors and textures to the dish. A few common additions: mushrooms, diced bell peppers, chopped spinach, eggplant, zucchini, and onions.

Cheese. Using ricotta or cottage cheese is a matter of personal preference. Ricotta cheese is thicker and richer whereas cottage cheese is a bit lighter in taste and texture. This recipe calls for cottage cheese, but ricotta may be substituted.

Storing Info

Make ahead of time. Prepare this Best Lasagna Recipe ahead of time and store it before baking.

  • To store in the fridge, cover the entire pan with plastic wrap and keep it in the refrigerator for 1-2 days.
  • To store it in the freezer, wrap the dish with plastic and again with aluminum foil. It will keep in the freezer for up to 2 months. Thaw in the fridge overnight before baking. 

STORE. Depending on how much you have, either divide the leftovers into individual servings or store larger portions together. In either case, store it in an airtight container in the refrigerator for 3-4 days.

FREEZE leftover Easy Lasagna in the freezer for up to 2 months. Thaw overnight in the fridge before baking. 

Reheat. Allow the lasagna to thaw, if applicable, and reheat it in the microwave or oven. If you have a jar of marinara sauce, add some sauce to the lasagna before reheating it to help keep it from drying out.

If reheating in the oven, cover the lasagna with foil and bake at 350°F until hot and bubbly.

Easy Lasagna Recipe

Our family's favorite lasagna recipe – not only because it's delicious but because it's so EASY! With beef, Italian sausage, three cheeses, and tons of seasonings, you know this recipe is going to be a hit!

Prep: 40 minutes
Cook: 25 minutes
Rest Time: 5 minutes
Total: 1 hour 10 minutes

Ingredients 

  • 1 tablespoon vegetable oil
  • 3 – 4 teaspoons minced garlic
  • 2 tablespoons fresh basil
  • salt and pepper, to taste
  • 6 cups tomato sauce
  • 1 pound beef
  • 1 pound pork
  • 1 (16-ounce) container sour cream
  • 2 cups low fat cottage cheese
  • 1 cup shredded Parmesan cheese
  • 2 cups shredded mozzarella cheese, more if needed
  • 1 package no-boil lasagna noodles
  • shredded Parmesan cheese, to taste

Instructions 

  • Preheat oven to 350 degrees F.
  • In a large pan over medium heat, sautee garlic in vegetable oil for 2-3 minutes. Stir in basil, salt, dash of pepper and tomato sauce. Reduce heat to low, cover and simmer for 10 minutes.
  • In another pan over medium heat, cook beef and pork until no longer pink, about 10 minutes. Drain fat.
  • Add meat to the tomato sauce mixture, cover and simmer for an additional 10 minutes.
  • Combine sour cream, cottage cheese and shredded Parmesan cheese in a bowl. Mix well and set aside.
  • In a 9×13 pan, spread 1 cup of the tomato sauce on the bottom. Layer lasagna noodles over the sauce and then spread another cup of tomato sauce on top of the noodles.
  • Add 1 cup of shredded mozzarella cheese on top of the tomato sauce and then half of the sour cream/cottage cheese mixture on top of the mozzarella cheese.
  • Add another layer of lasagna noodles, followed by a cup of tomato sauce, the last cup of shredded mozzarella and then rest of the sour cream/cottage cheese mixture.
  • Then, add one more layer of noodles and the remainder of the tomato sauce.
  • Add shredded Parmesan cheese to the top and bake for 25-30 minutes. Let set for 5-10 minutes before serving.

Texture Tip. For the best texture, be sure to use the right ingredients.  A few things can cause too much moisture in lasagna.  If you use a thin tomato sauce or nonfat sour cream and cottage cheese, the added water content in your ingredients will cause the lasagna to be too soupy.

      It is the original! We updated the recipe (which was still delicious, imo) but had lots of requests to bring back the original. So we listened and updated with that original recipe. It uses no boil lasagna noodles which makes it really quick and easy to prep!

    • 1 1/2 tsp kosher salt
    • 5 c tomato sauce
    • 1 lb beef
    • 1 lb pork
    • 16 oz sour cream

    • 1 c parmesan cheese 120g
    • 1 lb mozzarella cheese sliced
    • 1 pkg lasagna noodle no boil
    • Parmesan cheese to taste
    • pepper to taste

    1. Preheat oven to 350.
    2. In a pan, saute garlic in Vegetable oil on medium heat for 2-3 minutes. Stir in basil, salt, a little pepper, and tomato sauce. Simmer for 10 minutes. Turn down to low and continue to simmer.
    3. In another pan, brown your beef and pork. Add browned meat to your sauce and continue to simmer.
    4. In a bowl, combine Parmesan cheese, cottage cheese and sour cream. Mix well. Set aside.
    5. In a 9×13 pan, spread 1 cup of your sauce on the bottom. Layer with lasagna noodles and spread another cup of sauce on top of the noodles.
    6. Add a layer of sliced mozzarella cheese and then half the sour cream mixture.
    7. Then add another layer of noodles, followed by a cup of sauce, another layer of sliced mozzarella and the rest of the sour cream mixture.
    8. Then add one more layer of noodles and the last of the sauce.
    9. Add Parmesan cheese to the top, cover with foil and bake for 25-30 minutes (taking foil off for the last 5 minutes of cooking).

      Then NY Times and others have a habit of removing free access to their recipes. I learned therefore, to print recipes. Fortunately I learned this before this one changed. I too was dismayed, to say the least, that my web link brought me to a revised recipe.

      HANDS DOWN the original recipe is the best I have come across in my lifetime. Wow. EVERYONE I ever invited to share this lasagna with loved it and thought the lasagna: decadent.

    Came looking for the old recipe. I understand the need to update things, but providing a link to the original as an option would be fantastic. I don’t think fennel seeds and brown sugar add anything to lasagna.

    Very upset that the previous recipe for easy lasagna was removed recently. Have not made lasagna for a few months and went to search for your lasagna recipe because I loved it with sour cream in the cottage cheese layer and the no bake noodles.       I haven’t tried this particular recipe in the crockpot but I do know that you can cook most lasagna recipes in the crockpot as well. After you assemble it in the crockpot it usually takes about 4-5 hours on low to cook.

    I followed this recipe exacTly, and i don’t Know what happened but my lasagna was a soupy mess and the no boil noodles were still rock hard.

    Everything of course tasted great, but the presentation and the noodles Were a total turn off for me

      Sorry that happened. A few things can cause too much moisture in lasagna. If you use a really thin tomato sauce, or non-fat sour cream and cottage cheese, there will be more water content in your ingredients, causing the lasagna to be soupy. Also, if you live at a higher altitude, it may require a longer baking time than listed in the recipe. While you can make lasagna ahead and refrigerate or freeze it, it won’t necessarily reduce the moisture content, but the no boil noodles will soak up the watery sauce. The noodles should have softened, so not really sure why they didn’t do that. Hopefully, this helps 🙂

    This reciepe is so good and easy to folloW. Only difference i did was adding Sliced provalone with the sliced mozz. and used butter insteAd of veg oil. I ran into the soupy affect but 1.) i could tell it was going to happen before i put it in the oVen, i think i added to much sauce to the bottom & it swalloed the nooDles. 2) i upped the cooking time and broiled on high for a few minutes. The first fEw pIeCes were soupy but the rest was Fine! 🙂 highly recComend!

    Made this the night before and put in fridge. I took out of fridge couple hours before cooking. Used 9×13 dish and it was filled to brim..so while baking it overflowed so suggest lasagna pan with high sides. This was best lasagna I ever had and my dinner guests agreed. I had to cook mine 1 hour 15 min and I let it rest for 15 before cutting..it was perfect. Thanks for sharing recipe

    omg, yum! BoYfriend said it was the besT lasagna he’s ever had!

    To cut down on The carbs, i substituted one laYor of pasta for One layer of thInly sliced Zucchini and iT Was heavenly!

    The lasagna actually took 45 Min In the Oven, not 25-30. You know it’S done wiTh the cheese on top is lightly brown, and ThE sides are buBbling.

    I love my traditional lasagna recipe that I make and don’t vary from it very often. BUT I had to try this recipe using both beef and pork sausage. The flavors were so good. Best of all my kids love it as much as my normal recipe.

    I’m confused as to why you make SO much sauce (6 c tomato sauce plus two pounds of meat) to only use 4 cups in the actual lasagna.     Made the Easy Lasagna tonight using gluten free noodles and ricotta rather than cottage cheese. Otherwise I followed the recipe as written; baking time was 30 minutes and the lasagna was not soupy. I would suggest a deeper pan than the usual 9X13 baking dish sold in most stores. This lasagna is good but does not have the type of flavor I was looking for so I will keep trying easy recipes until I find “just the right one”. Give this recipe a try as it may be just the right recipe for your family. It is definitely potluck worthy. 3-20-2018

    Oh my! I have died and gone to heaven! I love this recipe and I am now a fan of cottage cheese in lasagna and I will never go back to ricotta! The first time I made this, I was shocked and so happy w/ the flavor and outcome of this lasagna. No messy, sliding all over the plate mess. Just a perfect plate of deliciousness. When I had to travel up North for family business, I froze three helpings for my husband. He ate them all!!     I am making this tonight, I noticed the tomato and meat mixture was a little lose so I just added 2TBS water and 1TBS cornstarch to a cup and mixed it. Added about half that mix to the pot and it thickened right up! Definitely excited to see how it turns out!! Also will be trying those fried zucchini tonight!!

    Many people are saying it’s soupy or watery. I wonder if it depends on the percentage of the cottage cheese and sour cream. The light and no fat tend to be more watery in general. I plan on making this soon!! It looks great!

    This REALLY is THE BEST lasagna. I had never thought of putting sour cream on it but boy does it do the trick! I didn’t have cottage cheese so I used queso fresco I had left, and it still turned out amazing. I also used ground turkey instead of beef and pork and still turned out o be the best lasagna.     Super easy and delicious! The grocery store had packaging in the exact amounts that the recipie called for, which was convenient. I had a little extra cheese mix and sauce left over, probably because the noodles I used didn’t quite fill the pan, so I added an extra layer, and used ricotta instead of cottage cheese. Had to cook a tad longer, probably because the extra layer, but wasn’t an issue for us! Glad I chose this recipe.

    I have made this recipe for company and potlucks and it is an absolute favourite. People love it! I have made it a day or two ahead and kept it refrigerated or freeze it and pull out when needed with no need to bake first. It works to thaw it out and then bake but you can also bake from a frozen state. The bake time does increase when you bake from frozen. I use only ground beef and depending if I have parmesan cheese on hand, I may or may not use it. Sometimes i’ll add a bit of grated parmesan cheese instead. Most of the time I will divide the recipe into two pans depending on how many people I plan to serve at one time, which can give you two separate meals then. Thanks for the recipe!

    I found this on pinterest because the picture intrigued me! Every other lasagna i’ve made was too dry, or the noodles took too long..etc. This was quick, easy, and delicious! Though I used butter to sautee the garlic and added diced onions. Not soupy here! Try using butter instead of Veg oil- only thing I can think of that would make it soupy. Thanks for the recipe!

        I ended up trying hot pork Italian sausage instead of the plain ground pork in my first attempt at making this lasagna. I also assembled the lasagna the night before I baked it, and kept it in the fridge over night. I let the lasagna sit at room temp about an hour before I baked it and then upped the cooking time by 15 minutes, including a few minutes under broil, to brown the cheese a bit.         Oh yeah, I also wanted to mention that my lasagna was a tad soupy, and I believe that it would have been worse had I not put it in the fridge overnight (where everyrhing had a chance to draw up some of the juices. Either that, or I suspect that using 1 cup less tomato sauce would be fine, too.

    I was eerie to make this after I saw the comments of it being soupy, and cottage cheese also made me a little nervous because I usually use ricotta but it turned out absolutely delicious! If you let it sit and cool off it isn’t soupy and it was more than ready after 25-30 minutes so we didn’t have any issues there either like some people mentioned. Instead of pork I just used 2lbs of beef and only one pack of mozzarella and it was great still. My boyfriend who is extremely picky also loves this recipe so we will definitely be making it again sometime 🙂

        I just put mine in the oven, I added a 12 oz can of tomato paste. Mainly because I like the taste of the tomato paste, but also because the recipe my mom used called for it. It helps thicken it up. I’ll let you know how it turns out. It is a very dense and deep recipe, I am not surprised it takes longer. But I think any lasagna I’ve ever made took longer than the recipe stated.

        Hello, I sometimes have soupy lasagne as well. One tip that has been very beneficial to me is to “dry out” the cottage cheese first. Place the cottage cheese between layers of paper towels and go over it with a rolling pin. Do this twice with fresh paper towels the second time. I hope this helps.

      I love the simplicity of this recipe. I substituted riCotta cheese for coTtage cHeese. I made it the night before and put it in the oven to cook while we wE were at church. It was not soupy at all, but i cooked it for about 45 minutes. The only negative feedback from My family is that it was just too “cheesy” with the sour cream and ricotta. I think those amounts could be reduced A little and it would still be good. I even had some of the sour cream mixture left over. I will use this recipe again.
