Our Favorite Fruit Pizza Ever!

My mom and aunts are famous for many desserts and one they’ve made for decades that they are especially famous for is today’s fruit pizza (along with Homemade Cinnamon Rolls, Banana Bars, and our Cinnamon Bread Recipe)!

We are so glad we learned how to make this treat as well, because it’s a favorite that is always requested for birthdays, Mother’s Day and all summer functions.

With it’s soft and tasty crust, light frosting and delicious fruit on top, it’s hard to beat.

  • Frosting. The sweet and tangy cream cheese and pineapple frosting is magical. It pairs perfectly with the sugar cookie crust!
  • For a last-minute treat. Make the crust and freeze it for a quick summer dessert when the craving strikes!

Ingredients

  • granulated sugar
  • unsalted butter
  • egg
  • all-purpose flour
  • cream of tartar
  • baking soda
  • salt
  • toppings – bananas, strawberries, kiwis, blackberries, pineapples, blueberries
  • cream cheese – softened
  • powdered sugar (confectioners’ sugar)
  • pineapple juice – or vanilla extract or almond extra for flavor
  • Fruit toppings – bananas, strawberries, kiwis, blackberries, pineapples, blueberries
    • Most soft fresh fruit can work well on this fruit pizza. For additional ideas, try apricots, peaches, mangoes, sliced grapes, mandarin oranges, or thinly sliced apples.

How to Make Fruit Pizza

  1. SUGAR COOKIE CRUST. In a large bowl cream together butter, sugar, and egg. Add the dry ingredients to the creamed mixture.
    • Spread dough onto a lightly greased pizza pan (or line with parchment paper) in a circle, leaving 1-2 inches around the edges (the dough will spread as it bakes).
  2. BAKE. Bake at 350°F for 10 minutes. Cool.
  3. FROSTING. Cream together frosting ingredients. Spread over slightly cooled cookie crust.
  4. FRUIT. Right before serving slice the fruit and decorate the top of the pizza. Keep refrigerated until ready to serve.

Recipe Tips

  • Slice the pizza. Use a round pizza cutter to slice this colorful fruit pizza. A large kitchen knife will also work. 
  • Frosting variation. Instead of the cream cheese filling, use different flavored pudding, Nutella, Lemon Curd, yogurt, or your favorite Yogurt Fruit Dip.
  • For holidays. Use the various fruits to create beautiful designs on the pizza. 
    • Patriotic. Perfect for Memorial Day or the Fourth of July. Use red fruit like strawberries or raspberries, blueberries, and bananas.
    • Christmas. Red fruit with kiwis and accent with a bright fruit like mandarin oranges or pineapple.
    • Rainbow. Start at the center with red fruit and work outward, or line the perimeter with red and work inward. Use layers of red, orange, yellow, green, blue, and purple fruits.
    • Different designs. Use different colored fruit to create stripes, circles/spiral patterns, or medallion patterns.

Storing Info

  • Make ahead of time. Prepare the ingredients a day beforehand, but don’t assemble the fruit pizza recipe until 2-3 hours before serving.
    • Crust – cook, cool and cover. Store at room temperature.
    • Frosting – store in an airtight container in the fridge.
    • Sliced fruit – store in separate containers in the fridge. Be cautious of fruits that become soggy or brown quickly. I suggest not cutting those until you assemble the pizza. 
  • STORE. Leftover best fruit pizza can be covered and stored in the fridge for a day or two. The fruit and crust will become more and more mushy the longer it’s stored, so it’s best to eat leftovers fairly quickly.

Fruit Pizza

Fruit pizza is an all-time favorite that starts with a sugar cookie crust and is completely customizable with your favorite fruit.

Ingredients 

  • ¾ cup sugar
  • ½ cup unsalted butter
  • 1 egg
  • cups + 2 tablespoons all-purpose flour
  • 1 teaspoon cream of tartar
  • ½ teaspoon baking soda
  • teaspoon salt

Toppings

  • bananas, strawberries, kiwis, blackberries, pineapples, blueberries

Frosting

  • 1 (8-ounce) package cream cheese, softened
  • ½ cup powdered sugar
  • 2 tablespoons pineapple juice, or vanilla extract

Instructions 

  • Preheat the oven to 350°F.
  • In a medium bowl, cream together sugar, butter, and egg with a hand mixer.
  • In another bowl, mix flour, cream of tartar, baking soda, and salt.
  • Add dry ingredients to creamed mixture and mix until well combined.
  • Dip hands in flour and spread dough onto a lightly greased pizza pan until it is approximately ¼ inch thick. Leave 1–2 inches around the edges of the pan for dough to expand.
  • Bake for 10 minutes, then let cool.
  • While crust cools, make the frosting. In a medium bowl, cream together cream cheese, sugar, and pineapple juice with the hand mixer. Spread over cooled cookie crust.
  • Right before serving, add desired fruit in the pattern you prefer. Tip: Dip bananas in pineapple juice to keep them from getting dark fast.
  • Keep refrigerated for up to 3 hours until ready to serve.

Pressed for time. If you do not have time to make a homemade crust, you can easily grab a package of sugar cookie dough from the market. Press the dough into the pan and bake at 375°F for about 13 minutes.
