A festive pizza treat!

A few weeks ago the kids asked if we could make a Halloween treat. I scoured some magazines and came across a Halloween Cookie Cake from Pillsbury and knew it would be perfect for our weekend creating. The kids were SO excited, and I was excited to give it a try.

The result was AMAZING!! Not only was it super easy to make but it looks like a million bucks (or straight from the bakery down the road!!)

It was also delicious and was a HUGE hit with the kids. They insisted I make it for their Halloween Party this Saturday to share with all their friends.

We had this cake as is, but I think it would also be great with some ice cream. And, I think next time I make it I’ll try our go-to cookie dough recipe instead. It’s our favorite recipe for Chocolate Chip cookies, and I know it will be perfect for this cookie cake. 😉

PREP. Begin by preheating oven to temperature on cookie roll. Line a large jelly roll pan with parchment paper.

DOUGH. Take out cookie dough from package and press together (or you can also make your favorite homemade cookie dough – we like to halve our classic chocolate chips cookies).

ROLL. Roll out until it’s a circle that is about ¼ inch thick. Cook 14-16 minutes or until golden brown. Let cookie cool.

FROSTING. Frost cookie with orange (or any other color) of frosting.

TOPPINGS. Top with cut up Rolos and Reeses Pieces. Drizzle on chocolate syrup.

Be creative with your toppings. We stayed close to autumn colors but pretty much any Halloween colored frosting and candies will work. A few ideas include:

  • Chocolate frosting with a white frosting spider web
  • Halloween shaped sprinkle candies
  • Try using bright green or purple food coloring in the frosting
  • Candy Corn
  • Chopped nuts

Recipe Tips + How to Store

To make this simple and quick dessert we used a Pillsbury package of cookie dough. However, you can easily use your favorite cookie dough such as Chocolate Chip Cookie or Peanut Butter Chocolate Chip.

Once you have the cookie dough made, then you will need to weigh out 16.5 oz of the homemade dough and follow the rest of the recipe instructions.

Perfect circle: If you want this to be more circular, you can choose to line a deep dish pizza pan with parchment paper and bake it that way. Just keep an eye on the cookie as it bakes.

This cookie cake can be stored very easily. Store it whole or cut into slices. The following storage info applies to both

STORE in an airtight container on the counter. Add a slice of white bread to help keep the cookie base soft and chewy. Store for 3-5 days.

To FREEZE, wrap tightly in plastic and then again with aluminum foil, or place in a freezer Ziploc. Freeze for up to 3 months. Thaw slightly before eating.

*Chocolates may take on a white chalky look. That is just fat particles rising to the surface and it is perfectly fine to eat.
