Cookies + Cream Bark

We love a good candy bark. We’ve whipped up some yummy ones in the past- Marbled Peppermint Bark, Easter Oreo Bark, Melted Witch Bark. This one is a simple version that is delicious any time of the year!

Oreo Cookie Bark is just that, Oreo and vanilla candy coating. How simple is that ingredient list?! It’s covered in crunchy cookie pieces, and tastes delicious!

Whipping it up is pretty simple too, just heat, combine, spread and cool! It’s such an easy recipe, the kids love to help make this one.

Because it’s easy, we love to make it for sharing, gifting, and really just enjoying ourselves. It makes a great addition to Christmas plates during the holiday season, or in a giftbag for a Valentine’s day treat!

Making Oreo Cookie Bark

PREP. Line a 9 x 13 pan or baking sheet with parchment paper. Melt the candy coating according to the package directions. Scoop 2 tablespoons of the candy coating into a separate bowl.

MIX. Reserve two tablespoons of the Oreo cookie crumbs in a separate bowl, then stir the remaining Oreos into the candy coating.

SPREAD + LAYER. Pour and spread the Oreo mixture in an even layer in the prepared pan, working quickly before the candy melts harden. Drizzle the reserved candy coating over the top of the bark, then sprinkle the remaining Oreo chunks over the top.

COOL. Let cool completely, then cut into 24 pieces with a sharp knife.

Variations

One of the easiest ways to change up this recipe is to use different flavors of Oreos: White Chocolate Oreos, Peppermint Oreos, Peanut Butter Oreos, Birthday Cake Oreos, Pumpkin Oreos and more! You can also add extra mix ins to the bark such as:

  • Crushed Pretzels
  • Chocolate Chips, white chocolate chips, dark chocolate chips
  • Sprinkles to match a holiday
  • Flavored chips such as mint or peanut butter that match the flavor of the Oreos
  • Candy such as M&Ms or Reese’s Pieces
  • Crushed or sliced almonds or other nuts

The perfect cut

Cutting perfect squares: Most candy barks are typically broken into uneven pieces. Be sure to let the bark cool and set before breaking or cutting.

Use your hands to break them, or hit it with a kitchen mallet.

For even cuts, use a hot knife:

  1. Dip a sharp knife in hot water for about 30 seconds
  2. Quickly wipe dry and cut the bark
  3. The hot knife should easily slice right through
  4. Reheat the knife in water as needed

Storing + Gifting

STORE. Once the bark has cooled, it can be stored in an airtight container for up to 2 weeks or refrigerated for up to 3 weeks.

FREEZE. For longer storage, keep in the freezer for up to 6 months. Be sure to use a freezer safe storage container, and thaw before eating. 

Giftable. Bark is a great candy to give to neighbors and friends.

Since it’s so pretty, I like to use clear containers like cellophane bags ,or containers with a clear lid.

Festive metal tins, or even a brown bag tied with a ribbon will also work – because it’s what’s on the inside that counts. Right?

    I’m not real good at making this kind of stuff. This recipe is simple and of course anything with Oreos is delicious!
