This Crockpot hashbrown casserole is an easy, cheesy, family favorite! It’s perfect for Thanksgiving or as an easy Sunday side dish.

What we love about the slow cooker is the set-it-and-forget-it mindset. That’s one reason why we love this crock pot version of our classic Cheesy Hashbrown Casserole (very similar to Funeral Potatoes)!

Not only is this dish SO cheesy and delicious, but it’s the perfect Thanksgiving Side Dish or Easter Side Dish since it frees up valuable oven space!

Add this cheesy goodness into your holiday dinner menu or regular side dish rotation. You won’t be sorry, and your family will love you even more for it!

WHY WE LOVE IT:

Ingredients

  • 1 (10.75-ounce) can cream of chicken soup – or use cream of celery soup, cream of mushroom soup, or a can of cream of chicken & mushroom soup.
  • 8 ounces sour cream or Greek yogurt.
  • 16 ounces frozen shredded hash brown potatoes – use an equal amount of frozen diced potatoes. You can also use fresh potatoes.
  • 8 ounces diced ham – or crumbled sausage, or top with cooked crumbled bacon.
  • 8 ounces sharp cheddar cheese – use Colby jack cheese or a combination of the two. Increase the amount for extra cheesy hash browns. 
  • ¼ cup onions – or mix in diced bell peppers
  • ¼ teaspoon black pepper – for added flavor use garlic powder, onion powder, paprika, or red chili flakes.
  • 1 cup Cornflakes – If you don’t have cornflakes, use crushed crackers or Panko for some crunch.
  • 2 tablespoons butter – melted

Fresh Instead of Frozen

You will need about 4 Russet potatoes.

  1. Peel and shred the potatoes.
  2. Place them in a pot of water and bring to a boil, then turn off the burner.
  3. Let the potatoes sit in the hot water for about 5 minutes, then drain.
  4. Add to the crock pot and proceed with the recipe.

How to Make Crockpot Hashbrown Casserole

  1. PREP. Spray a slow cooker with cooking spray.
  2. COMBINE. In a large bowl combine 1 can chicken soup, 8 ounces of cream, 16 ounces hash browns, 8 ounces ham, 8 ounces cheese, ¼ cup onions, and ¼ teaspoon black pepper. Stir to combine.
  3. COOK. Pour into slow cooker and cook for 2 hours and 30 minutes.
  4. TOPPING. In a small bowl, mix 1 cup corn flake cereal and 2 tablespoons melted butter. Toss to combine and pour over casserole, in slow cooker.
    • Cover and cook for an additional 30 minutes.

  • 8 ounces sour cream, light
  • 16 ounces hash brown potatoes, shredded and frozen
  • 8 ounces ham, diced
  • 8 ounces sharp cheddar cheese, cubed
  • ¼ cup onions, chopped
  • ¼ teaspoon black pepper
  • 1 cup Cornflakes
  • 2 tablespoon butter, melted

Instructions 

  • Spray a slow cooker with cooking spray.
  • In a large bowl combine chicken soup, sour cream, hash browns, ham, cheese, onions, and black pepper. Stir to combine.
  • Pour into slow cooker and cook for 2 hours and 30 minutes.
  • In a small bowl, mix Corn Flake cereal and butter. Toss to combine and pour over casserole, in slow cooker.
  • Cover and cook an additional 30 minutes.

How do I make the cornflake topping extra crunchy?

Remove the ceramic insert containing the casserole and place it in the oven to broil. Watch carefully, as the cornflakes will crisp up quickly and can burn quickly as well.

Place leftover crockpot cheesy hashbrown potatoes in an airtight container in the refrigerator for 3-4 days.

How to freeze?
