I LOVE finding new and yummy cookie recipes to try out! We are big fans of cookies in this house.
I recently found a recipe for Cherry White Chocolate Pudding Cookies and decided to change it up just a bit and made a Strawberry Cookies version.
Let me tell ya – pure heaven! The Jell-O and pudding mix in the recipe are the perfect additions and makes the cookies so addicting and chewy!
The white chocolate chips add flavor that isn’t too overpowering – a perfect compliment.
Because of the sweet pink coloring, these Strawberry Cookies would be perfect for Valentine’s day or maybe a baby shower! And they are SO delicious.
How to Make Strawberry Cookies
PREP. Preheat oven to 350°F. Spray a baking sheet with cooking spray or line it with a silicon mat or parchment paper.
WET INGREDIENTS. In a large bowl, cream butter, sugar, and jello powder together. Add eggs and vanilla and mix well.
DRY INGREDIENTS. In a separate bowl, mix together flour, pudding mix, baking soda, and salt. Slowly add to the butter mixture. Mix well. Fold in white chocolate chips.
BAKE. Spoon onto a greased baking sheet. Bake for 9-11 minutes.
Variations
Strawberry Jello Cookies are perfect the way they are, but here are a few suggestions to change them up!
Pudding. Use vanilla or instant cream cheese pudding instead of white chocolate instant pudding. The only difference would be the flavor of the cookies. Be sure it is INSTANT pudding and use only the dry powder in the cookies. Do not make it into pudding.
Jello. Change the flavor by substituting the strawberry Jello powder with another flavor such as raspberry or cherry. Do not make the jello, just use the jello powder. I used the JELL-O brand and not a generic version.
Frosting. I would suggest our Strawberry Frosting. Some other options include Berry Buttercream, Cream Cheese, Vanilla, or even Marshmallow frosting. Top the frosting with sliced fresh strawberries to add more strawberry flavor.
Recipe Tips
Room temperature ingredients. Room-temperature eggs and butter will incorporate better with the other ingredients.
Set them on the counter about 30 minutes before starting the recipe. Or use this: Soften Butter Quickly.
Cooling. Allow the cookies to rest on the baking pan for 5-7 minutes after cooking. This will allow them to finish cooking, then transfer them to a cooling rack to cool completely.
Picture perfect cookies. Place a few white chips on the top of the cookies when they’re just out of the oven. Use a cookie scoop to ensure that every cookie is the same size.
Storing Info
STORE. Cool Strawberry White Chocolate Chip Cookies and store them in an airtight container (adding a piece of bread will help keep them soft). Cookies will last for about a week.
Cookie dough can be covered and stored in the refrigerator for 1-2 days before baking.
FREEZE the dough. Roll it into a log and freeze altogether, or roll it into individual balls to freeze and easily bake later.
- Log: once you have the dough rolled into a log shape, wrap it with plastic wrap and again with foil. Label and freeze for 1-2 months.
- Dough balls: form the cookie dough into balls, place them all on a baking sheet, and put the sheet into the freezer. Once the dough balls are frozen, transfer them to a freezer-safe airtight container. Freeze for 1-2 months.

Strawberry Cookie Recipe
Ingredients
- 1 cup unsalted butter softened
- 1 cup sugar
- 2 tablespoons strawberry Jell-O mix
- 2 eggs
- 1 teaspoon vanilla extract
- 2½ cups all-purpose flour
- 1 (3.4-ounce) package white chocolate instant pudding
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 (12-ounce) bag white chocolate chips
Instructions
- Preheat the oven to 350 degrees F.
- In a large bowl, cream butter, sugar and Jell-O mix together with a hand mixer. Add eggs and vanilla and mix well.
- In a separate bowl, mix flour, pudding mix, baking soda and salt. Slowly add to the butter mixture, and mix well.
- Fold in white chocolate chips.
- Use a small cookie scoop to scoop and roll dough into 1½-inch balls, then place on a greased baking sheet.
- Bake for 9–10 minutes.
- Let cookies sit on the cookie sheet for a few minutes, then remove to a rack to cool.

No, it’s just the mix… so you use 2 TB DRY Jello Mix (from the box) and later you use DRY Pudding mix (in the box) to add to the recipe. 🙂

These cookies were very good but the strawberry taste was almost undetectable. They just tasted super sweet.
Is it really 1 cup of butter (4 sticks).??? I followed the recipe exactly and they didn’t come out like your picture. They are flat and crumbly 🙁

I used orange jello, vanilla pudding and they turned out good. I’m going to try those changes plus orange zest and orange juice instead of vanilla extract next time…they become orange creamsicle 🙂

So what size of jello and pudding packaging? Because they have big box and a little box? And no milk? Wouldn’t they come out kind of hard? The intructions are kind of vague along with the measurements.
The pudding is the instant kind and is the small box – I believe it’s 3.5 ounces. 🙂
I just made very similar strawberry cookies and they were super delicious! Mine were pretty basic, though – with just strawberry cake mix….I’ll have to try this out and make it even more unique and yummy!
I seen in step 1 that it says to cream butter with the other ingredients but it isn’t in the list. Do I use butter in the mix? I am making these for my daughter and her friends today for their play date!

I made these last night and they were delicious! I just kinda skimmed the recipe and ended up using the whole box of strawberry Jello mix instead of just two tablespoons. I didn’t even realize I’d done it wrong until reading some of the other comments! They turned out delicious though! I think they turned out perfect using the whole box . . . and its easier than measuring out part of it, and then finding space to save (and a use for) a half-empty jello mix packet. My whole family has already gobbled most of them up! Thanks for posting such a delicious cookie recipe!
one question though . . . do you have any idea why mine came out more “puffed up” looking than yours? Yours look flat and chewy, while mine were puffy and a light fluffy texture. I’m not complaining at all, I love either kind of cookie! It just wasn’t what I was expecting from the pics. Maybe it was the extra Jello? I also baked them on a cookie sheet lined with oven-safe wax paper instead of baking them directly on the pan . . . maybe that kept them from spreading out very much, so they puffed up instead?
Hi Michaela… not sure why they would puff up. :/ When I make them they always turn out more flat and chewy like the picture. Next time, try putting them directly on the cookie sheet and use all the same measurements. Let me know how they turn out so we can figure out this problem. 🙂

I was wondering… what would happen if I put marshmallows in the middle instead of the white chocolate chips? Like strawberries and cream? Do you think this would work?
I’m trying to find pink baked desserts because my mom is a mammo tech and having a bake sale so these cookies would be perfect. She told me everyone does brownies because they’re easy so I wanted to have something fun and pretty thrown in the mix. Maybe a good white icing, topped with pink sugar and a pink breast cancer awareness ribbon on top?

I was noticing you have 2 teaspoons of vanilla in the instructions and only one teaspoon of vanilla in the ingredients. So is it one or two teaspoons of vanilla?

I made these and added dried strawberries to the mix as well. Delicious!!! I also have made white chocolate lemon, butterscotch chocolate chip, pistachio with mini marshmallows, Rocky road, lemon berry, black forest (chocolate pudding and maraschino cherries).

Made them, and love them!!! But I was wondering what type of flour should I be using? I used all pourpose flour.. But wondering if I should be using cake flour?? Hi Joy!! I used regular all-purpose flour. Also, I think adding a drop or two of pink food coloring will help. Mine turned out a real pretty pink and didn’t need food coloring, but I don’t think it would hurt to add it. Hope that helps! 😀

So different from yours, I had to tweak and bake, tweak and bake! 🙂 we don’t have instant pudding available, so I used the one that has to be cooked. Maybe that’s all the difference in the world! They were cakey and had a chemical aftertaste. Well, we had to eat them anyway! 🙂

Just made your YUMMY cookies. Wanted to make them for a baby shower and they are awesome! Yummy flavor! They did not turn out as pink as yours, but are still a pale baby pink and so pretty with the white chips poking through. Some people were asking how many this recipe makes, I used a 3 inch ice cream scoop, and got exactly three dozen. Just what I needed. Yea!
I forgot to add, I had to cook mine for 15 minutes since the were so big. They are so yummy, I may not have any left for the shower.

hello I was wondering would I be able to use a strawberries cream pudding mix & not use the jello? I didn’t know if they would still come out pink.
Made them! They turned out very yummy however the pink disappeared in the oven somehow. The dough was super pink because I used the entire packet of jello mix, but when they came out of the oven they were almost white. I did use an off brand of jello though,do you think that was the cause? Anyway, good recipe!

My family LOVES these!!!! I have made them 3 times, once even using Raspberry Jell-O in place of the Strawberry. I personally liked the original Strawberry better because it’s sweeter but my hubby likes Raspberry better since it’s not as sweet. They came out perfect everytime and were super soft even after a few days stored in Zip-loc baggies!

Do you have an equivalent to instant pudding? I haven’t tried substituting it before. If you google substitutions for instant pudding in cookies, there are suggestions, so you’d need to just see what you have. Hope that helps!

Glad you like them! I haven’t tried them as a pumpkin flavor, but maybe you can use a couple teaspoons of pumpkin puree, instead of the strawberry jello. Or, use vanilla pudding, but a however much pumpkin spice you’d like. I have seen pumpkin jello, but it might be hard to find at the moment.
I made these gluten free and they tured out perfect. I used Bob’s 1-1 flour.

Even better than I thought they would be! I did not get as many as the recipe said…I made them larger and got about 16 cookies. It was hard to tell when they were done, I waited until the bottoms started to brown. They were perfect; soft inside and firm enough on the bottom to support their weight.

Love this recipe . Used vanilla pudding instead of white chocolate . It’s what I had on hand . I also used raspberry extract instead of vanilla. Did not change any measurements. A banana version with walnuts would also be tasty. A request from my husband ! It made 24 cookies and baked 14 min. Used small ice-cream scoop on metal cookie sheet non stick. Was a breeze with my kitchen aid. Keep the great recipes coming!

Not sure how this has has such good reviews. I followed the recipe exactly and the dough was like play-doh and they taste extremely artificial. Disappointed to say the least.

The first time I made them, I used stick butter that wasn’t quite all the way softened and they did turn out with a play-do like consistency but they were still good! I made sure that the butter was softened all the way through on the rest of the batches I’ve made and now they’re absolutely perfect!
Easy to make and so delicious. I can’t ever find white chocolate instant pudding so I just use vanilla.

Well at first I couldn’t figure out why my dough was sticky. So I put it in the fridge for a bit to harden. Cookies were flat and kinda greasy after baking.. thennnn I realized I only put 1 and 1/2 cups of flour instead of 2 and 1/2 cups (smh) hahah well I had myself a chuckle and will absolutely need to try this recipe again as the cookies did still taste good lol!
