This copycat Taco Bell Mexican pizza is supremely flavorful and delicious, perfect for any night of the week!

Similar to our Taco Pizza, this mini version is packed with Mexican flavor and is a favorite along with classic Tacos and Bean Burritos.

Who Doesn’t Love Pizza?

Especially when it’s Pizza with a Mexican twist?! We’ve taken all of our favorite Mexican flavors and created a tasty twist to recreate a Taco Bell favorite.

Like Taco Bell, our pizza uses flash-fried taco-sized flour tortillas with seasoned ground beef and refried beans sandwiched in between. Taco Bell uses a red pizza sauce which is combined with enchilada sauce or salsa, our version uses just red enchilada sauce. 

Why we love it:

  • Simple to make. There are few ingredients, and they are straightforward and simple.
  • Any night of the week! While it does take a bit of time to make, it’s a quick enough meal to enjoy on weeknights and weekends.
  • Spices and flavors. You’ll love the classic flavors of this dish that make it a favorite Mexican dinner idea and variety of textures!

Taco Bell Mexican Pizza Ingredients

  • ground beef – Alternatively, use ground turkey or ground chicken. 
  • taco seasoning Easily adjust the spices added to the ground beef by making your own Taco Seasoning and increasing your favorite flavors.
  • water
  • vegetable oil
  • Flour Tortillas Flour tortillas are traditionally used, but corn tortillas can be used instead.  
  • refried beans store-bought or Homemade Refried Beans.
  • red enchilada sauce store-bought or Homemade Enchilada Sauce.
  • shredded Mexican cheese blend I love the flavors of a Mexican cheese blend but use whatever shredded cheese you wish like cheddar cheese, Pepper Jack Cheese, or Colby Cheese. 
  • Toppings – Our copycat recipe uses similar ingredients, but also includes onions, black olives, and sour cream. Try adding diced tomatoes, sliced green onion, sliced olives, sliced jalapenos, Pico de Gallo, Salsa, diced avocado, Guacamole, or sour cream.

How to Make a Mexican Pizza from Taco Bell

  1. BEEF. Preheat oven to 400°F. Brown ground beef in a skillet and drain excess oil. Add 1 packet taco seasoning and ¾ cup water and stir. Bring to a boil then reduce heat and simmer until thickened.
  2. TORTILLAS. Cook tortillas in a separate large skillet for about 3-4 minutes (flipping frequently) until crisp and golden brown. Continue with the rest of the tortillas. Set aside.
  3. BEANS. Heat the 15-ounce can of refried beans in a microwaveable-safe bowl.
  4. ASSEMBLE. On each fried tortilla, slather a generous layer of refried beans. Then top with seasoned ground beef.
    • Place another tortilla on top. Slather about two tablespoons from the 10-ounce can enchilada sauce on top. Top with shredded cheese. Continue assembling the rest of the pizzas.
  5. BAKE the pizzas on a large nonstick baking sheet for about 8-10 minutes or until the cheese is melted. Serve with your favorite toppings like diced tomatoes, sliced green onion, sliced olives, and sour cream.

Air Fryer Directions

  • Preheat your air fryer to 400°F. Prepare the meat as directed. 
  • Place a flour tortilla in the air fryer basket. Cook for about 2-3 minutes, until it becomes crispy, flipping halfway through the cooking time. Repeat with the remaining tortillas.
  • Assemble the pizzas as directed in the recipe.
  • Place the pizzas, one at a time, in the air fryer basket and cook for about 5-7 minutes, until the cheese is melted and bubbly.
  • Serve the air-fried Mexican pizzas hot, topped with your desired toppings.

Recipe Tips

  • Make a vegetarian pizza. Instead of using ground beef use a plant-based ground meat substitute like veggie crumbles, tofu, or tempeh. Season it with the taco seasoning and assemble the pizza as directed.
  • Taco Bell Mexican pizza challenge. This is a popular food challenge where participants attempt to eat a Taco Bell Mexican pizza within a certain time limit. The challenge can be found in various eating competitions or on social media platforms. You can whip up some at home for a fun challenge with your friends. 

Storing Info

  • Prep ahead of time. Prepare the different elements of the dish the day before and keep them stored separately until you are ready to assemble and bake.
  • STORE. It is best to remove any toppings and then store the leftovers in an airtight container or plastic wrap. Keep in the refrigerator for up to 4 days. 
    • To reheat. Preheat the oven to 350°F and place the desired number of pizzas on a baking sheet. Heat for about 10 minutes or until warm through. If you’re on the go or short on time, you can reheat them in the microwave.

Taco Bell Mexican Pizza Recipe

Ingredients 

For the pizzas:

  • 1 pound ground beef
  • 1 (1-ounce) packet taco seasoning
  • 2/3 cup water
  • 1 cup vegetable oil
  • 8 flour tortillas taco size
  • 1 (15-ounce) can refried beans
  • 1 (10-ounce) can red enchilada sauce
  • 2 cups shredded Mexican cheese blend

Toppings:

  • diced tomatoes
  • sliced green onion
  • sliced olives
  • sour cream

Instructions 

  • Preheat oven to 400°F. In a large saucepan or skillet over medium heat, cook ground beef until no longer pink and crumbly. Drain grease.
  • Increase heat to medium-high heat, and add taco seasoning and water and cook until water is evaporated making sure to stir occasionally (about 5 minutes).
  • In a separate large skillet, heat 1 cup vegetable oil over medium heat. Add one of the 8 flour tortillas (taco size) and cook for about 3-4 minutes (flipping frequently) until crisp. Continue with the rest of the tortillas. Set aside.
  • Meanwhile, heat the 15-ounce can of refried beans in a microwaveable-safe bowl. This will make it easier to spread the beans onto the tortilla shells.
  • On each fried tortilla, slather a generous layer of refried beans. Then top with seasoned ground beef.
  • Place another tortilla on top. Slather about two tablespoons from the 10-ounce can enchilada sauce on top. Then place some of the 2 cups shredded Mexican cheese blend on top of the sauce. Continue assembling the rest of the pizzas.
  • Place the pizzas on a large nonstick baking sheet and bake for about 8-10 minutes or until the cheese is melted. Serve with your favorite toppings like diced tomatoes, sliced green onion, sliced olives, and sour cream.
