Yes – Just 3 Ingredients!

We are ALL about simple recipes – and this 3 ingredient banana bread is just that – SIMPLE!

All you need is yellow cake mix, eggs, and overripe bananas (add a 4th ingredient – chocolate chips – if you’re a fan). Yes, the cake mix is filled with several ingredients which is kind of cheating, but it’s only ONE ingredient to buy. 😉

This sweet bread ends up a little more cakey than some of our other banana bread recipes, but it is delicious and loved by the entire family. It’s especially great to make when you are running low on pantry staples but still want some yummy bread. Plus, it takes just minutes to throw together.

We love banana bread in all its forms – traditional banana bread, muffins, cream cheese filled – the list goes on and on. This recipe is no different! And we especially love that it only takes three ingredients!

WHY WE LOVE IT:

  • Yes, 3 ingredients! A yellow cake mix, eggs, and bananas and you are good to go!
  • Cake-like texture. It does have more of a cakey texture which we love!
  • Just mix and bake. And you thought the ingredients were easy?! This quick bread is a breeze all around.

Ingredients

  • 2 bananas overripe see How to Ripen Bananas faster.
  • 2 large eggs room temperature
  • 1 (15.25-ounce) box yellow cake mix
  • optional mix-ins – Try using white chocolate chips or cinnamon chips or add chopped nuts, like walnuts, to the top before baking.

How to Make 3 Ingredient Banana Bread

  1. PREP. Preheat the oven to 325°F and spray only the bottoms of the bread pans.
  2. MIX. Mash 2 overripe bananas in a medium mixing bowl. Add 2 eggs and 1 box of cake mix and mix by hand with a wooden spoon.
  3. BAKE. Split the batter in half and pour into the bread pans. Sprinkle on some chocolate chips before baking if you love the addition of chocolate to your banana bread.
    • Bake for 28-35 minutes. Check the middle with a toothpick before taking it out. Extend bake times based on how hot your oven cooks. Cool on a wire rack.

Make Muffins or Mini Loaves

Muffins. Evenly divide the batter into about 24 muffin tins. Bake at 350°F for 15-20 minutes or until a toothpick inserted in the center comes out clean. 

Mini loaf. Use 4-5 mini bread loaf pans and bake at 350° for about 22-28 minutes, or until cooked throughout.

Ingredients 

  • 2 bananas, overripe
  • 2 eggs
  • 1 (15.25-ounce) box yellow cake mix
  • sprinkle chocolate chips or nuts on top, optional

Instructions 

  • Preheat the oven to 325°F and grease only the bottoms of your bread pans.
  • Mash bananas in a medium bowl.
  • Add eggs and cake mix and mix by hand with a wooden spoon. 
  • Divide into 2 bread loaf pans and bake for 25-30 minutes. Check the middle with a toothpick before taking them out. (You may need to extend bake times based on how hot your oven cooks.)

    This was easy and tasty! I had a moment of doubt when I decided to do half muffins (12) and half bread pan but both grew to a decent size. I will make this again.

    This is the second time I’ve made this recipe and both times the center collapsed! I’m totally disappointed because these were to be given as part of my cookie tray gifts. I’m sure I’ll go back to my own recipe!! All ingredients were fresh except the bananas. I wasted my time and all the ingredients it took to make six cakes!!
