Cauliflower Rice Stir Fry

Fried rice is one of my go-to recipes. Our homemade version is to. die. for. My family is constantly requesting I make it for dinner. This cauliflower rice version is just as yummy and it’s packed with veggies which makes it a lot healthier! Perfect for all your New Year resolutions to eat a little lighter and add in more veggies.

One of the best things about this dish is how many veggies are in it—carrots, peas, cauliflower, and green onions.

You can buy cauliflower rice at the store that is already made for you, OR you can make your own. It’s really simple. Try our cauliflower rice recipe before you make this fried rice!

Cauliflower fried rice is gluten-free, keto-friendly, and has so much flavor you won’t even notice you’re eating cauliflower! It’s also super simple to make.

I’m always looking for easy and healthy recipes and this one is definitely a winner. The pork loin and the egg bring in lots of protein for a complete meal. Make it. You won’t regret it!!

Can you add protein?

Yes! There are a lot of different protein options to add in this cauliflower fried rice. All of these options would be super tasty!

  • pork loin (in this recipe)
  • chicken
  • steak
  • ground pork
  • ground turkey

How to Make Cauliflower Fried Rice

PEAS. Add the frozen peas and water to a small pot and bring them to a boil. Once it is boiling, reduce the heat to low and cook the peas for about 5 minutes or until they are tender. Drain the peas and dump out the excess water.

PORK. Add 2 tablespoons of sesame oil to a wok or a large sauce pan. Heat the sesame oil over medium-high heat. Add the pork pieces and cook for 8-10 minutes or until it is cooked through. Remove the meat from the pan and set aside.

VEGETABLES. Add the remaining oil to the pan and sauté the green onions, carrots, and garlic on medium heat for 5 minutes. Add in the riced cauliflower and cook for an additional 5 minutes.

COMBINE. Add in the pork, peas and soy sauce and cook an additional 5 minutes, making sure to toss frequently.

EGGS. Move the ingredients to one side of the pan and pour the beaten eggs into the pan on the opposite side. Cook and scramble the eggs for a few minutes. Then mix all of the ingredients together.

Wondering if there are other veggies you can add in? Always! Just make sure to cut them into very small pieces. Here are some suggestions:

  • snow peas
  • asparagus
  • bell pepper
  • cabbage
  • broccoli
  • spinach
  • baby kale

Store any leftover cauliflower fried rice in an airtight container in the fridge. It will last 4-5 days- perfect for heating up as a healthy leftover lunch idea.

Can I use frozen cauliflower rice? You can! Just boil it along with the frozen peas at the beginning.

Cauliflower Fried Rice Recipe

Ingredients 

  • 2 cups frozen peas
  • 1/4 cup sesame oil divided
  • 4 cups pork loin cubed
  • 6 green onions sliced
  • 1 carrot cubed
  • 2 tsp minced garlic
  • 20 oz riced cauliflower
  • 6 tbsp soy sauce
  • 2 eggs beaten

Instructions 

  • Add peas and water to a small pot and bring to a boil. Once boiling, reduce heat to low and cook for about 5 minutes or until peas are tender. Drain and dump excess water.
  • Add 2 tbsp sesame oil to a wok or large sauce pan and heat to medium-high heat. Add pork and cook for 8-10 minutes or pork is cooked through. Remove meat from pan and set aside.
