Naturally Sweet!

We LOVE breakfast food. We love it so much that on a weekly basis we serve up breakfast for dinner. With such busy mornings, and no time for elaborate meals, we have to whip up our favorites in the evening.

This is a win-win in our books, because it’s never too late for a plate of pancakes or a breakfast casserole!

Hubby loves him some waffles, so that is a staple in our house. While we love our buttermilk waffles, it’s fun to mix things up.

I thought I’d add some natural sweetness by mashing up bananas and adding them in the batter. The result was this batch of luscious Banana Waffles. They are borderline banana bread, part waffle, and all good!

How to make banana Waffles

PREP. Preheat waffle iron

DRY INGREDIENTS. Sift together flour, sugar, baking powder, salt, nutmeg and cinnamon in a large mixing bowl.

WET INGREDIENTS. Whisk in milk, egg, vanilla extract, and mashed bananas and stir until just incorporated (you don’t want to over-mix).

COOK + SERVE. Pour batter onto greased waffle iron and cook until golden. Serve warm.

Favorite Toppings

The Banana Waffles are absolutely delicious and can easily be eaten without any toppings at all. Of course should you want to add some extra delicious flavors here are some favorites:

TIPS + FAQ

Waffle Tip: The less you fuss with the batter the fluffier your waffles will be! I always let my batter sit for a few minutes to thicken before I make the waffles.

  • Be sure you mix the dry ingredients separately as directed in the instructions.
  • Don’t over mix. Its ok if the batter has a few lumps.

How to freeze? Freeze these waffles to be enjoyed later whether you make ahead of time or have leftovers.  Place the cooked waffles on a parchment paper lined baking sheet. Freeze until frozen (about 2 hours). Then, put them in an airtight freezer safe container. I usually use a Freezer Ziploc bag. The waffles will stay good for up to 4 months.

How to store? Store leftovers in an airtight container in the fridge for 2-3 days.

How to reheat? To reheat refrigerated or frozen waffles, preheat oven or toaster oven to 350 degrees F and bake for 10-15 minutes or until hot. You can also heat them up in a toaster or the microwave.

This is my go to recipe for delicious banana waffles. Simple and easy to make even for a 75 year old male. I did delete the sugar but added pecan pieces. They freeze up nicely too. Many thanks for this great recipe.

I made it with wheat flour and I put the fine shredded bulgur in it like one tablespoon and it worked well for me,
The bulgur I never thought it will make it a hint of crisp but it worked for me and the recipe without my suggestion is already perfect

    Many thx

Had some really ripe bananas. Decided to try your recipe especially bc of all the good reviews. My husband would not eat them. The flavor is fine but they have no crispness to them at all like most waffles. Did you forget to add a little melted butter or oil to the recipe? Won’t make them again. Sorry.
