Easiest Coffee Cake of All!

Coffee Cake is a Merkley favorite! Grandma has made it for us for as long as we can remember, and now we make it as often as possible for breakfast, brunch, holidays and showers.

Because we love it so much, we have several varieties on the site including today’s recipe for Bisquick Coffee Cake. This version is the easiest of all with the shortcut of Bisquick and has a delicious crumbly streusel on top that adds both texture and sweetness.

Ingredients

Cake

  • 2 cups baking mix, such as Bisquick®
  • ⅔ cup milk
  • 2 tablespoons sugar
  • 1 large egg room temperature
  • ¼ teaspoon cinnamon
  • optional mix-in Mix in blueberries with the batter. You may need to increase the bake time to adjust for the added liquid

Topping

  • 1 cup baking mix, such as Bisquick®
  • 1 cup brown sugar – light or dark brown sugar
  • 6 tablespoons butter cold
  • 1 teaspoon cinnamon nutmeg or allspice
  • optional additions – chopped nuts
  • optional topping – Drizzle on a powdered sugar glaze.

How to Make Bisquick Coffee Cake

  1. PREP. Grease a deep 9-inch pie pan and heat the oven to 400°F.
  2. BATTER. In a medium bowl combine 2 cups baking mix, ⅔ cup milk, 2 tablespoons sugar, 1 egg, and ¼ teaspoon cinnamon. Mix until well combined. Spread the batter into the pie pan.
  3. TOPPING. In a separate bowl use a fork or pastry cutter to combine the 1 cup baking mix, 1 cup brown sugar, 6 tablespoons cold butter, and 1 teaspoon cinnamon.
    • Sprinkle the topping over the batter in the pie pan. Use a butter knife to gently press the topping down into the batter as if making a tic tac toe board several times over the top of the cake.
  4. BAKE Bake for about 30 minutes, or until a toothpick comes out clean. Let cool in the pan before cutting and serving.
    • If the topping is browning, faster than the cake is baking, tent a piece of tin foil over the top for a reminder of the baking time.

Pro Tip: ADD a CRUMB LAYER

  • Instead of pressing the topping into the batter, create a middle layer of the cinnamon mixture.
  • Place half of the batter in the pie pan. Add a layer using half of the topping mixture. Top with the remaining batter and then spread on the rest of the cinnamon topping.

Topping

  • 1 cup brown sugar
  • 6 tablespoons butter
  • 1 teaspoon cinnamon

Instructions

  • In a medium bowl combine the baking mix, milk, sugar, egg, and cinnamon. Mix until well combined. Spread the batter into the pie pan.
  • Mix up the topping: In a separate bowl use a fork or pastry cutter to combine the baking mix, brown sugar, butter, and cinnamon.
  • Spread the topping over the batter in the pie pan. Use a butter knife to gently press the topping down into the batter as if making a tic tac toe board several times over the top of the cake.
  • Bake for about 30 minutes, or until a toothpick comes out clean. Let cool in the pan before cutting and serving.

    This was very good. Except that the topping, around the outer rim, was so hard. I’m not sure if I did something wrong. It was so hard that it was difficult to cut thru. Like a crunchy toffee candy bar.
