Green beans are a favorite in our house. It’s a vegetable the kids will actually eat, which means we make it often. Green beans almondine may seem a little bit fancy, but it’s actually SO easy! It’s on the table in just 20 minutes – prep the green beans and sauté!

The term almondine simply means to be cooked with almonds – basically elevated green beans. But again, this is a snap to make. The almonds add so much flavor, along with garlic, butter, and lemon zest. We top it all off with feta cheese and watch it disappear!

It doesn’t take much to make green beans next level!! They are PACKED with delicious flavor.

Green Beans Almondine Ingredients And Substitutions

  • 1 tablespoon salt
  • 2 tablespoons butter – unsalted butter
  • ⅓ cup sliced almond – or slivered almonds
  • 1 tablespoon olive oil – We use extra virgin olive oil.
  • 2-3 cloves garlic, minced – see How to Mince Garlic, or use 1 teaspoon already minced garlic.
  • 1 pound fresh green beans, trimmed – While French green beans (haricot vert) are a classic choice, we also love using regular green beans.
  • garlic salt and freshly ground pepper – to taste
  • 1 teaspoon lemon zest – see How to Zest a Lemon
  • feta cheese, optional – or parmesan cheese or crumbled goat cheese

How to Make Green Beans Almondine

  1. GREEN BEANS. Fill a large pot with water and bring to a boil. Add salt and green beans and boil for 4-6 minutes (until crisp).
    • Immediately drain beans and rinse with cold water. Set aside.
  2. SEASON. In a large skillet over medium heat, melt butter, then add almonds and stir constantly, toasting for 2-3 minutes, or until golden.
    • Add garlic and olive oil and stir until fragrant. Add green beans, tossing to coat, then season with garlic salt and pepper. Remove from heat.
    • Garnish with lemon zest and feta cheese, if desired, and serve immediately.
  • French green beans (haricot vert) are a classic choice, but regular green beans also work well.
  • Parboiling in salt water helps the beans retain a bright green color and adds flavor to the inside of the beans. Cook only to al dente, crisp tender, and do not overboil.
  • We have found that we can make the dish a few hours before serving and keep it warm in a crock pot.

Green Beans Almondine

Crisp green beans meet lemon, garlic, and toasted almonds in this easy, elevated side dish – green beans almondine, ready in just 20 minutes!

Ingredients 

  • 1 tablespoon salt
  • 2 tablespoons butter
  • cup sliced almonds
  • 1 tablespoon olive oil
  • 2-3 cloves garlic, minced
  • 1 pound fresh green beans, trimmed
  • garlic salt and freshly ground pepper, to taste
  • 1 teaspoon lemon zest
  • feta cheese, optional
